Perkedel Jagung (Corn Fritters)



In Indonesian & English

Bahan
  • 2 Jagung manis-rebus lalu sisir, 5 sm Terigu
  • 2 Daun bawang-iris, 2 Telur, 4 sm Panko/panir
  • 2 Daun jeruk-iris tipis2, 100-125 ml Air
  • 2 Cabai-iris tipis2 (opsional), Minyak
Haluskan:
  • 2 (7 gr) Bawang putih kecil, 1 st Ketumbar
  • 2 (14 gr) Bawang merah, 2 st Garam, 1 st Gula

Cara membuat
  • Tumbuk kasar 1/3 porsi jagung. Campur rata semua jagung dng daun bawang, cabai, daun jeruk, bumbu halus dan telur.
  • Satukan panir & terigu. Tuangi air sedikit2 sambil diaduk. Masukkan jagung ke adonan tepung.
  • Panaskan minyak dengan api sedang. Masukkan adonan dengan sendok makan, setiap kali sebanyak 4-5 sendok di minyak panas. Goreng sampai matang & kedua sisinya kuning kecoklatan. Angkat & tiriskan di kertas penyerap minyak.

Ingredients
  • 2 sweet Corn-boiled, 2 Egg, 5 tbsp Flour
  • 2 Green onions-sliced, 100-125 ml Water
  • 2 Kaffir lime leaves-thinly sliced
  • 4 tbsp Panko/breadcrumbs, Frying oil
  • 2 Chilies-thinly sliced (optional)
  • Grind into a paste:
  • 2 (7 gr) small cloves Garlic, 1 tsp Coriander
  • 2 (14 gr) Shallots, 2 tsp Salt, 1 tsp Sugar

Directions
  • Cut the kernels off the corn. Coarsely pound 1/3 portions of corn kernels. Mix all of the corn with green onion, chilies, lime leaves, ground spices & egg.
  • Combine the panko/ breadcrumbs with flour. Pour in the water, a little at a time; stir constantly. Combine this batter with seasoned corn.
  • Heat frying oil over medium heat. Using a tablespoon, drop 4-5 corn batter at a time into hot oil. Fry until golden brown on both sides. Remove from the pan & drain on paper towel.
