Sambal Goreng Kentang & Udang (Spicy Fried Potatoes & Shrimps)

Bahan
-  700 gr Kentang-ptg dadu, 1 sm Gula mrh     Haluskan
-  200 gr Udang, 10 bj Petai-iris (optional)      -  10 Cabai merah, 3 Bawang pth
-  2 cm Lengkuas & 1 Sereh-geprek, 2 Asam    -  2 st Garam, 1 Tomat, 1 cm Jahe
-  2 Dn jeruk, 3 Dn salam, 250 ml Santan       -  6 Bawang mrh, 3 Kemiri


Cara membuat
-   Remas2 kentang dng garam seckpnya, diamkan 15 mnt, goreng hingga kuning kecoklatan
-   Tumis bumbu hls, masukkan lengkuas, sereh, daun jrk, salam, asam, petai, santan. Aduk, masak sebentar, beri gula mrh. Sesdh santan susut mskkan kentang & udang, aduk sampai mengering, angkat.

Ingredients
-  700 gr Potatoes-dice cut, 3 Bay leaves        Grind into a paste:
-  250 ml Coconut milk, 2 Tamarind               -  3 Candlenuts, 3 cloves Garlic
-  2 cm Galangal & 1 Lemongrass-bruised         -  10 Chilies, 1 Tomato, 2 tsp Salt
-  2 Kaffir lime leaves, 1 tbsp Brown sugar       -  6 Shallots, 1 cm Ginger
-  200 gr Shrimps, 10 Stinky beans-sliced (opt)

Directions
-   Squeeze the potatoes with enough salt; let it stand for 15 min. And then fry them until golden brown.
-   Sauté the spices paste. Stir in galangal, lemon grass, bay & lime leaves, tamarind, stinky beans, coconut milk. Add in brown sugar. After the coconut milk reduced, put in fried potatoes & shrimps, stir until it all dries.
