Sambal Godok Betawi/Sayur Labu (Chayote Stew Betawi Style)

Bahan
-  1 Labu siam-ptg korek api, 1 st Gula  -  1 st Kaldu bbk, 2 D.Salam, 2 st Garam
-  10 Kacang panjang-iris 1 cm                  Haluskan:
-  450 ml Santan+200 ml Air                      -  8 Bawang merah, 2 cm Jahe
-  5 Bawang mrh-iris tipis, ¼ st Lada       -  3 Baw. pth, 2 cm Lengkuas muda
-  1 Sereh-geprek, 3 Daun jeruk               -  6 Cabai merah+2 Cabai keriting

Cara membuat
-   Remas2 labu dng 1 st garam hingga layu. Bilas. Tumis bawang merah iris sampai harum.
-   Mskkan bumbu hls, sereh, daun salam, daun jeruk, labu, tumis matang. Tuang santan, beri kacang panjang, garam, lada, kaldu & gula secukupnya. Masak sampai mendidih. Angkat & siramkan di atas potongan lontong. Sajikan dng telur goreng & kerupuk.

Ingredients
-  1 Chayote-shredded, 2 tsp Salt                      Grind into a paste:
-  10 Long beans-1 cm cut, 1 tsp Sugar           -  8 Shallots, 3 Garlic cloves
-  450 ml Coconut milk+200 ml Water                -  2 cm young Galangal
-  5 Shallots-thinly sliced, 2 Bay leaves             -  2 Cayenne peppers
-  ¼ tsp Pepper, 1 Lemongrass-bruised               -  6 Red Chilies, 2 cm Ginger
-  3 Kaffir lime leaves, 1 tsp Beef broth pwd

Directions
-   Squeeze chayote with a bit salt to wither. Rinse with water & drain. Set aside.
-   Sauté sliced shallots until fragrant. Stir in the spices paste, lemongrass, bay leaves, lime leaves & chayote until the chayote cooked.
-   Pour in Coconut milk; add in long beans, salt, pepper, broth pwd & sugar. Cook until bubbling. Removed from the heat & then pour the stew over sliced lontong (rolled & compressed rice cakes). Served with fried eggs & crackers.
