Tahu Goreng Tepung (Flour Coating Fried Tofu)

Bahan
  • 10 iris Tahu, 50 ml Air, 1 st Garam, 1 st Ketumbar bubuk
  • 2 Bawang putih-haluskan, ½ st Lada bubuk, Minyak goreng
Bahan Pelapis Alternativ I:
  • 1 st Tepung tapioka, 50 gr Terigu, 1 st Ketumbar bubuk
  • 125 ml Air es, ½ st Baking powder, 2 sm Tepung beras
  • 1 Bawang putih & 1 Bawang merah-haluskan, 100 gr Panir
  • 1 Telur-kocok, 1 st Garam, ½ st Kaldu bubuk, ½ st Lada
  • 1 Daun bawang-iris, 2-3 Daun jeruk-iris halus
Bahan Pelapis Alternativ II:
  • 100 gr Tepung beras+1 sm Tepung sagu2 sm Santan
  • 3 Kemiri+1 cm Kencur+2 Bawang putih-haluskan
  • 1 st Garam, 1 st Ketumbar bubuk, 100 ml Air

Cara membuat
  • Campur air, bawang putih, garam, ketumbar & lada. Masukkan tahu. Diamkan 20 menit. Tiriskan.
  • Alternativ I: Campur tepung2 (kecuali panir), baking powder, telur, bumbu halus, kaldu, garam & lada. Beri daun bawang & daun jeruk, aduk. Tuangi air es sedikit2 sambil diaduk. Masukkan tahu ke bahan celupan, gulingkan di panir. Goreng hingga kuning kecokelatan.
  • Alternativ II: Campur tepung2 dengan bumbu halus, garam & ketumbar. Beri santan & air, aduk rata. Masukkan tahu ke bahan celupan, goreng hingga kuning kecokelatan.

Ingredients

  • 10 sliced Tofus, 50 ml Water, 2 Garlic cloves-grind
  • 1 tsp Coriander, 1 tsp Salt, ½ tsp Pepper, frying Oil

Coating ingredients alternative I:

  • 50 gr Flour, 2 tbsp Rice flour, 1 tsp Tapioca flour
  • ½ tsp Baking powder, 125 ml cold Water, 1 tsp Salt
  • 1 Garlic clove & 1 Shallot-grind, 1 tsp Coriander
  • ½ tsp Broth powder, 1 Egg-beaten, ½ tsp Pepper
  • 1 Green onion-cut, 2-3 Kaffir lime leaves-sliced
  • 100 gr Breadcrumbs

Coating ingredients alternative II:

  • 100 ml Water, 100 gr Rice flour+1 tbsp Sago flour
  • 3 Candlenuts & 2 Garlic cloves-grind, 1 tsp Salt
  • 1 cm Lesser galangal-grind, 2 tbsp Coconut milk
  • 1 tsp Coriander powder


Directions
  • Blend water, garlic, salt, coriander & pepper. Soak tofu in the mixture for 20 minutes; drain them.
  • Alternative I: Mix flours (with the exception of breadcrumbs), baking powder, egg, ground spices, broth, salt & pepper. Add in green onion & lime leaves, mix well. Pour in cold water a little at a time; stir constantly. Dip tofu in the batter; then roll it in breadcrumbs. Fry tofu until golden brown
  • Alternative II: Mix flours, ground spices, salt & coriander. Pour in coconut milk & water, mix well. Dip tofu in batter & then fry until golden brown.
