Gulai Padeh Pucuk Ubi/Gulai Daun Singkong Padang (Spicy Cassava Leaves Curry)


In Indonesian & English 

Bahan
-  2 ikat Daun Singkong, Air                   Haluskan:
-  2 Sereh & 3 cm Lengkuas-geprek      -  5 Baw.mrh, ½ st Ketumbar, ½ Tomat bsr
-  1 btg Daun Kunyit, 5 Daun salam      -  2 Baw.putih, 7 Cab.keriting, 4 Kemiri
-  400 ml Santan, 8 cm Jahe-geprek    -  3 st Kaldu bbk, 2 st Garam, 4 cm Kunyit

Cara membuat
-   Rebus empuk daun singkong, peras, kepalkan lalu potong per 1 cm agar tdk panjang. Buang airnya.
-   Tumis bumbu hls sampai harum. Beri 700 ml air, sereh, lengkuas, salam, jahe, daun kunyit, daun singkong. Mskkan santan sambil aduk, didihkan.

Ingredients
-  2 bundle of Cassava leaves                        Grind into a paste:
-  8 cm Ginger & 3 cm Galangal-crushed   -  5 Shallots, 4 Candlenuts, 2 tsp Salt
-  1 stalk Turmeric leaf, 5 Bay leaves       -  2 cloves Garlic, ½ tsp Coriander
-  400 ml Coconut milk, Water                    -  3 tsp Broth pwd, ½ big Tomato
-  2 Lemongrass-bruised                                 -  7 Cayenne peppers, 4 cm Turmeric

Directions
-   Boil the Cassava leaves until soft, wring & make it into several balls; slice each balls every 1 cm. Discard the remaining water
-   Saut√© the spices paste until fragrant. Put in 700 ml of water, lemongrass, galangal, bay leaves, ginger, turmeric leaf, cassava leaves. Stir in coconut milk; bring it to a simmer.
