Urap Sayuran (Vegetable Salad with Grated Coconut)


In Indonesian & English

Bahan
1 Jagung kecil-rebus & sisir                      -  60 gr Kelapa parut (+ 2 sm santan*)
1 Wortel Kecil-ptg korek api & kukus     Haluskan:
4 lbr Kol-ptg & rebus, 1 Daun Salam     -  1 Bawang putih, 2 cm Kencur
6 Kacang panjang-ptg & kukus                  -  2 Bawang merah, 1 Cabai keriting
1 ikat Kangkung/Bayam-ptg & rebus        -  3 st Gula, 2½ st Garam, 1 Cabai mrh
3 Daun jeruk, 2 btg Kemangi-petik

Cara membuat
-   Campur bumbu hls dng kelapa. Beri daun jeruk & salam. Kukus matang. Beri kemangi. Campur kelapa dng sayuran rebus & kukus.
* Bila menggunakan kelapa kering, campur dulu dng santan sebelum di kukus.

Ingredients
1 Corn-boiled, 3 Kaffir lime leaves     -  60 gr grated Coconut (+ 2tbsp Coconutmilk*)
1 Carrot-shredded & steamed              Grind into a paste:
4 sheets Cabbage, 1 Bay leaf               -  1 clove Garlic, 2 cm Lesser Galangal
6 String beans-cut & steamed              -  2 Shallots, 1 Cayenne peppers, 2½ tsp Salt
1 bundle Water Spinach/Spinach         -  3 tsp Sugar, 1 red Chili
2 stalks Lemon basil leaves

Directions
-   Cut the kernels off the corn. Cut & then boiled water spinach/spinach & cabbage. Mix the spices paste with grated coconut. Put in kaffir lime leaves & bay leaf. Steam until it cooked. Add in lemon basil leaves. Mix grated coconut with vegetables.
* If you`re using dry grated coconut, mix it first with the coconut milk before steaming
