Nasi Goreng Kencur (Lesser Galangal Fried Rice)


In Indonesian & English


Bahan
- 300 gr Nasi putih, 2 sm Kecap manis       - Bawang goreng-utk taburan
- 100 gr Fillet ayam-goreng, suwir2          Haluskan:
- 2 Daun bawang-iris, 3 sm Minyak goreng   - 3 Bawang merah, 2 Bawang putih
- 2 Telur-buat orak arik, 1 Ketimun-iris     - 2 Cabai merah, 4 cm Kencur
- 1 Tomat-iris, 4 cm Kencur-cincang hls     - 6 Rawit, 1 st Lada, 2 st Garam

Cara membuat
-   Tumis bumbu halus. Masukkan kecap, telur, ayam, daun bawang & nasi, aduk, masak sampai nasi kering & harum. Taburi bawang goreng, makan dng ketimun & tomat iris.

Ingredients
- 300 gr cooked Rice, 2 Eggs-scrambled     - 1 Cucumber-sliced, Fried Onion
- 100 gr Chicken Fillet-fried & shredded     Grind into a paste:
- 2 Green onions-sliced, 3 tbsp Frying Fat   - 3 Shallots, 2 Garlic cloves, 2 tsp Salt
- 4 cm Kaempferia/Lesser Galangal-minced   - 2 Red Chilies, 4 cm Lesser Galangal
- 2 tbsp Sweet Soy sauce, 1 Tomato-sliced  - 6 Bird`s Eye Chilies, 1 tsp Pepper

Directions
-   Sauté the spices paste. Put in soy sauce, chicken, scrambled eggs, green onion & rice, mix well. Fry until the rice dry & it smells good.
-   Sprinkle with fried onion; eat the fried rice with sliced cucumber & tomato.

Sambal Goreng Kentang & Udang (Spicy Fried Potatoes & Shrimps)

Bahan
-  700 gr Kentang-ptg dadu, 1 sm Gula mrh     Haluskan
-  200 gr Udang, 10 bj Petai-iris (optional)      -  10 Cabai merah, 3 Bawang pth
-  2 cm Lengkuas & 1 Sereh-geprek, 2 Asam    -  2 st Garam, 1 Tomat, 1 cm Jahe
-  2 Dn jeruk, 3 Dn salam, 250 ml Santan       -  6 Bawang mrh, 3 Kemiri


Cara membuat
-   Remas2 kentang dng garam seckpnya, diamkan 15 mnt, goreng hingga kuning kecoklatan
-   Tumis bumbu hls, masukkan lengkuas, sereh, daun jrk, salam, asam, petai, santan. Aduk, masak sebentar, beri gula mrh. Sesdh santan susut mskkan kentang & udang, aduk sampai mengering, angkat.

Ingredients
-  700 gr Potatoes-dice cut, 3 Bay leaves        Grind into a paste:
-  250 ml Coconut milk, 2 Tamarind               -  3 Candlenuts, 3 cloves Garlic
-  2 cm Galangal & 1 Lemongrass-bruised         -  10 Chilies, 1 Tomato, 2 tsp Salt
-  2 Kaffir lime leaves, 1 tbsp Brown sugar       -  6 Shallots, 1 cm Ginger
-  200 gr Shrimps, 10 Stinky beans-sliced (opt)

Directions
-   Squeeze the potatoes with enough salt; let it stand for 15 min. And then fry them until golden brown.
-   Sauté the spices paste. Stir in galangal, lemon grass, bay & lime leaves, tamarind, stinky beans, coconut milk. Add in brown sugar. After the coconut milk reduced, put in fried potatoes & shrimps, stir until it all dries.

Ayam Suwir Pedas/Sisit Bali (Balinese Spicy Shredded Chicken)


In Indonesian & English

Bahan
2 Dada ayam-rebus & suwir2, 5 Dn jeruk   Haluskan:
300 ml Santan, 2 sm Air asam, Minyak       - 5 Cabai mrh, 10 Baw.mrh, 4 Kemiri
2 Dn salam, 1 sm Gula jawa-sisir                   -  2 cm Kencur, 2 cm Kunyit, 5 Baw.pth
1 cm Lengkuas & 2 Sereh-geprek                   -  2 st Garam, 1 st Lada, 2 cm Jahe
1 Jeruk limau, 2 sm Kecap manis                   -  3 Cabai keriting, 1 st Terasi

Cara membuat
-   Tumis bumbu hls hingga harum. Mskkan santan, ayam, daun jeruk, sereh, lengkuas, salam, kecap, gula jw & air asam. Masak hingga cairan terserap.
-   Panaskan oven 200°C. Panggang ayam 15 mnt. Beri air perasan jeruk limau, aduk.

Ingredients
2 Chicken breasts, 1 tbsp Brown sugar        Grind into a paste:
300 ml Coconut milk, 1 Kaffir lime               -  5 Red chilies, 1 tsp Shrimp paste
5 Kaffir lime leaves, 2 Bay leaves                  -  2 cm Lesser galangal, 1 tsp Pepper
1 cm Galangal & 2 Lemongrass-bruised         -  5 cloves Garlic, 2 cm Turmeric
2 tbsp sweet Soy sauce, frying Oil               -  3 Cayenne peppers, 2 cm Ginger
2 tbsp Tamarind juice                                       -  2 tsp Salt, 10 Shallots, 4 Candlenuts

Directions
-   Boiled & then shred the chicken, set aside. Sauté the spices paste until fragrant. Put in coconut milk, chicken, lime leaves, lemongrass, galangal, bay leaves, tamarind juice, soy sauce & brown sugar. Cook until the liquid absorbed.
-   Preheat the oven 200°C. Roast the chicken for 15 mins. Stir in kaffir lime juice.

Ayam Woku (Woku Chicken/Manadonese Spicy Chicken)

Bahan

-  1 Ayam-ptg2, 1 st Garam, 150 ml Air, ½ st Gula  Haluskan:
-  5 sm Minyak, 2 Sereh-geprek, 30 Daun kemangi   -  8 Baw.mrh, 2 cm Kunyit
-  2 sm Air jrk nipis, 100 ml Santan (opsional)        -  3 Baw.pth, 4 Rawit, 2 st Garam
Iris halus:                                              -  3 cm Jahe, 6 Kemiri, 1 Tomat
-  7 Daun jeruk, 1 Pandan, 1 Daun kunyit             -  3 Cabai keriting, 7 Cabai hijau
-  5 Cabai hijau, 3 Daun bawang


Cara membuat
-   Lumuri ayam dng garam & air nipis, diamkan 30 menit. Goreng ayam setengah matang.
-   Tumis bumbu halus dng minyak. Masukkan ayam & bahan lain (kec. kemangi & d.baw), aduk. Beri air & santan, didihkan. Masak sampai ayam matang & kuah menyusut. Mskkan daun bawang & kemangi, masak lagi 2 mnt.

Ingredients
-  1 Chicken-cut, 1 tsp Salt, 150 ml Water       Grind into a paste:
-  5 tbsp Frying oil, 2 Lemongrass-bruised         -  6 Candlenuts, 2 cm Turmeric
-  2 tbsp Lime juice, 30 Lemon basil leaves        -  4 Bird`s eye chilies, 2 tsp Salt
-  ½ tsp Sugar, 100 ml Coconut milk (optional)     -  3 cloves Garlic, 3 cm Ginger
Thinly sliced:                                        -  3 Cayenne peppers, 7 Green chilies
-  7 Kaffir lime leaves, 1 Pandan leaf              -  8 Shallots, 1 Tomato
-  5 Green chilies, 1 stalk Turmeric leaves    
-  3 Green onions

Directions
-   Rub the chicken with salt & lime juice; let it stand for 30 mins; then fry until half cooked.
-   Sauté the spices paste with oil. Stir in the chicken & other ingredients with the exceptions of basil leaves & green onions. Pour in the water & coconut milk; bring to a simmer. Cook until the chicken tender & the gravy reduced; add in basil leaves & green onions, cook for 2 mins.

Italian Style Schnitzel with Spaghetti & Tomato Sauce

Bahan
-  500 gr Daging/ayam fillet-ptg tbl 1-1½ cm  Saus Tomat:
-  1 st Rosmary, Garam, lada, Ketumbar        -  1 B.bombay-iris, 1 sm Tomat pasta
-  100 gr Terigu, 100 gr Parmesan, Minyak     -  3 Baw.pth-cincang, 8 Buah Olive-ptg2
-  3 st Oregano segar-ptg, 2 Telur-kocok       -  1 st Oregano kering, 2 st Garam
-  3 sm Mentega, 100 gr Panir                   -  7 Tomat bsr, 2 sm Olive oil, 1 st Gula
Spaghetti:                                         -  1 st Balsamico, 2 st Thyme, 1 st Lada
-  250 gr Spaghetti, 2 sm Olive oil              -  5 Jamur champignon-ptg, 2 Dn salam
-  1½ lt Air+2 sm Garam                         -  ¼ Paprika/2 Cabai-ptg2

Cara membuat
-   Schnitzel: Campur daun oregano, keju, rosmary & panir, sisihkan. Lumuri daging dng garam, lada, ketumbar, diamkan ½ jam. Lapisi daging dng terigu, celup di telur, lapisi dng panir. Pnskan mentega+minyak, goreng daging hingga kecoklatan, angkat, tiriskan di kertas minyak
-   Saus: Didihkan air, rebus tomat sampai merekah. Angkat, kupas kulit, potong2. Tumis baw. pth, bombay, paprika dng olive oil. Mskkan tomat, jamur, olive, salam, oregano, thyme. Masak di api kcl sampai tomat hancur, beri tomat pasta, balsamico, garam, lada, gula, aduk.
-   Spaghetti: Didihkan air+garam, mskkan Spaghetti, masak sampai matang. Angkat, & tiriskan. Beri sedikit olive oil, aduk rata.
-   Penyedian: Atur daging dan spaghetti di piring saji, beri saus di atas spaghettinya.

Ingredients
-  500 gr Pork/chicken fillet, Salt, Pepper   Tomato Sauce:
-  1 tsp Rosmary, 3 tbsp Butter, fry.Oil     -  1 Onion-sliced, 1 tbsp Tomato paste
-  100 gr Parmesan, 2 Eggs-beaten           -  3 cloves Garlic-chopped, 1 tsp Pepper
-  3 st fresh Oregano-cut, Coriander         -  7 big Tomatoes, 1 tsp dried Oregano
-  100 gr Breadcrumbs, 100 gr Flour         -  8 Olives-cut, 2 tsp Thyme, 2 tsp Salt
Spaghetti:                                      -  2 tbsp Olive oil, 1 tsp Balsamico
-  250 gr Spaghetti, 2 tbsp Olive oil          -  5 Champignon-cut, 2 Bay leaves
-  1½ lt Water+2 tbsp Salt                    -  ¼ Paprika/2 Chilies-cut, 1 tsp Sugar

Directions
-   Schnitzel: Combine the oregano, parmesan, rosmary & bread crumbs; set aside. Slice the meat 1-1½ cm thick; rub them with enough salt, pepper & coriander; let it stand for 30 mins. Coat the meat with flour; dip into the beaten eggs; cover all with bread crumbs. Preheat the frying oil & butter; fry the meat until golden brown. Lift from the oil, drain on paper towels.
-   Sauce: Boil a pot of water, cook the tomatoes until the skin cracked; then lift from the water & peel the skin completely. Cut them small, set aside. Sauté the onion, garlic & paprika with olive oil. Add in the tomatoes, champignon, olives, bay leaves, dried oregano & thyme. Cook over low heat until the tomatoes smoothed; then put in tomato paste, balsamico, salt, pepper, sugar. Stir & cook until the sauce becomes thicker.
-   Spaghetti: Boil Spaghetti in boiling water+salt until it cooked. Drain spaghetti with a fine strainer. Put the spaghetti in a bowl, mix them well with a little olive oil.
-   Place the meat & spaghetti in serving plates, pour tomato sauce over the spaghetti.

Tum Daging/Ayam Bali (Balinese Steamed Pork/Chicken Parcels)

-  ¼ kg Daging ayam/babi cincang                       Haluskan:
-  6 Dn Jeruk, 4 sm Minyak, 5 sm Santan       -  3 Baw.pth, 1 st Lada, 6 Cabai mrh
-  6 Dn. salam, 1 Sereh-blh 2 & ptg jd 6        -  1 Baw.mrh, 4 Kemiri, 1 sm Garam
-  2 Dn pisang-pembks, 1 st Terasi (opsional)  -  2 cm Jahe, 3 cm Kencur
Iris tipis & goreng sebentar:
-  2 Baw.pth, 2 Cabai mrh, 5 Baw.mrh
Cara membuat
-   Tumis bumbu hls. Beri daging, santan, terasi & gorengan bawang-cabai, masak ½ matang, angkat.
-   Ptg dn pisang jadi 6 lbr uk ± 14X27 cm. Cuci/rendam daun pisang dng air pns sblm digunakan agar lbh elastis. Susun 1 ptg sereh, 1 dn jrk, 1 salam di daun pisang. Beri tumisan daging di atasnya. Bungkus, semat dng lidi. Kukus hingga matang. Angkat, diamkan ± kmd bakar agar harum.
Ingredients
-  ¼ kg ground Pork/Chicken, 6 Bay leaves        Grind into a paste:
-  6 Kaffir lime leaves, 5 tbsp Coconut milk     -  2 cm Ginger, 1 tbsp Salt, 6 red Chilies
-  1 Lemongrass-halved & cut into 6 pcs          -  1 Shallots, 4 Candlenuts, 1 tsp Pepper
-  4 tbsp Fry.fat, 2 Banana leaves-wrappers    -  3 cloves Garlic, 3 cm Lesser galangal
-  1 tsp Shrimp paste (optional)
Thinly sliced & then fried until ½ cooked:
-  2 Chilies, 5 Shallots, 2 cloves Garlic
Directions
-   Sauté the spices paste; add in the meat, coconut milk, fried shallots+garlic+chilies & shrimp paste. Stir until half cooked; remove from the heat.
-   Cut banana leaves into 6 square sheets (@ ± 14X27 cm). Wash/soak the banana leaves in hot water before using it as wrappers, in order to make them more elastic/softer. Place 1 piece of each lemon grass, bay leaf & lime leaf in the center of each banana leaf sheets. Place some meat above; then wrap up the banana leaves until it covers all. Secure with a small skewer or toothpick. Steam until cooked. Remove from the steamer, let it rest for ± 5 mins & then grill the parcels briefly to get a smoky flavor.

Daging Sapi Lada Hitam (Black Pepper Beef)

Bahan

  • 400 gr Daging sapi, 1 st Jahe parut
  • 2 st Maizena-larutkan dengan 2 sm Air
  • 2 sm Margarine, 2 Bawang putih-haluskan
  • 1 st Garam, 2 st Lada hitam-gerus kasar
  • 1 st Pala bubuk, 2 st Wijen-sangrai
  • 1 Daun bawang, 25 gr Bawang bombay-iris
  • ¼ Paprika & 1 Tomat-potong2, 25 ml Air
  • 3 Cabai merah-iris (opsional)

Bahan Perendam:

  • 3 sm Minyak wijen, 1 sm Saus tiram
  • 2 sm Kecap manis, 1 sm Kecap ikan
  • 2 sm Saus soya, 1 sm Saus hoisin


Cara membuat

  • Potong daging tipis2. Campur bahan perendam & rendam daging di dalamnya 20 menit.
  • Tumis bawang putih, jahe, bombay, cabai & lada hitam dengan margarine di atas api besar. Masukkan daging & saus perendamnya, aduk hingga berubah warna. Beri air, garam & pala. Masak hingga air berkurang. Beri paprika, tomat & daun bawang.
  • Masukkan larutan maizena, masak sampai kuah mengental. Angkat, taburi wijen, aduk rata.

Ingredients

  • 400 gr Beef, 1 tsp grated Ginger
  • 2 tsp Cornstarch+2 tbsp Water
  • 2 cloves Garlic-grind, 25 ml Water
  • 2 tsp Black pepper-roughly crushed
  • 2 tsp roasted Sesame seeds
  • 25 gr Onion-sliced, 1 tsp Nutmeg
  • 1 Green onion, 2 tbsp Margarine
  • 1 Tomato & ¼ Paprika-cut1 tsp Salt
  • 3 Red chilies-sliced (optional)

Marinate sauce ingredients:

  • 3 tbsp Sesame oil, 1 tbsp Oyster sauce
  • 2 tbsp sweet Soy sauce, 1 tbsp Fish sauce
  • 2 tbsp Soy sauce, 1 tbsp Hoisin sauce


Directions

  • Thinly slice the beef. Combine all marinate ingredients; marinate the beef for 20 minutes.
  • Sauté garlic, ginger, onion, chilies & pepper with margarine over high heat. Add in the beef & marinade sauce; cook until the meat color change. Stir in water, salt & nutmeg; cook until the sauce reduced. Put in paprika, tomato & green onion.
  • Pour in corn starch mixture; keep on stirring until the sauce becomes rather thick. Remove from the heat; sprinkle sesame seeds on top; stir well

Dendeng Balado (Dried Beef with Chili Paste)

1 kg Daging paha sapi, 2 cm Jahe, 1 Nipis     Bhn Sambal:
2 Kentang-ptg korek api & goreng, Air             -  1 Baw.pth, 2 Dn jeruk, 2 Kemiri
2 cm Lengkuas & 1 Sereh-geprek, Minyak       -  1 Tomat kecil, 2 Cabai Keriting
Haluskan:                                                                      -  5 st Air kelapa/Santan, 8 Baw.mrh
4 Baw.pth, 2 Baw.mrh, 1 sm Ketumbar           -  ½ st Air jrk limau, 5 Cabai mrh
Garam secukupnya                                                   -  2 cm Kencur (opsional), Garam

Cara membuat
-   Mskkan daging ke freezer sampai ½ beku kmd iris tipis2 & lebar, sisihkan.
-   Tumis bumbu hls. Didihkan bumbu hls, sereh, lengkuas, jahe dng air yg cukup utk merendam daging. Matikan api, beri air nipis & daging. Dinginkan, rendam daging semalaman. Tiriskan, goreng sampai garing kecoklatan, tiriskan di kertas minyak. (Panggang di oven dng api atas 250° C selama ± 40-45 mnt hingga garing, kecoklatan).
-   Balado : Giling kasar bahan sambal (kec. dn jrk & santan), lalu goreng, beri dn jeruk & santan. Aduk sebentar sampai sambal matang, angkat.
-   Campur gorengan daging & kentang dng balado sebelum dihidangkan.

Ingredients
1 kg Top side beef, 2 cm Ginger               Chili paste:
2 Potatoes-shredded & deep fried             -  2 Cayenne peppers, 2 Kaffir lime leaves
2 cm Galangal-crushed, 1 Lime, Water    -  2 cm Lesser galangal (option), 8 Shallots
1 Lemon grass-bruised, frying Oil              -  5 tsp Coconut juice/coconut milk, Salt
Spices to grind:                                                  -  ½ tsp Kaffir lime juice, 1 small Tomato
4 cloves Garlic, 2 Shallots                            -  2 Candlenuts, 5 red Chilies, 1 clove Garlic
1 tbsp Coriander, enough Salt

Directions
-   Put the meat in the freezer until ½ frozen; then slice the meat really thin & rather wide. Set aside.
-   Sauté ground spices. Boil sautéed spices, lemon grass, galangal & ginger with water (enough to marinate the meat); bring it to a simmer. Turn off the heat; add in lime juice & sliced meat. Let it chill; marinate the meat on it over night. Drain the meat; deep fried in hot frying oil until the meat color becomes brown; then drain on paper towel (Roast the meat in the oven 250° C ± 40-45 min until the meat becomes brown & crispy).
-   Chili paste: Coarsely pound chili paste ingredients with the exception of lime leaves & coconut juice. Sauté the chili paste until fragrant, add in coconut juice/milk & lime leaves. Stir for awhile until the chili paste cooked & then remove from the heat.
-   Mix the fried meat & potatoes with the chili paste before serving.
