Rawon (Javanese Black Beef Soup)


In Indonesian & English

Bahan
350 gr Daging tetelan-ptg2, 1 st Air asam   Haluskan:
100 gr Kentang-ptg2, 1 Daun bawang-iris     -  6 Bawang merah, 3 Bawang putih
800 ml Air+2 st Kaldu bbk, 5 Daun jeruk      - 2 st Garam, 1 st Lada, 1 st Gula
3 D. Salam, 1 st Gula jawa-sisir, 5 Kluwak   -  4 Kemiri, 1 st Ketumbar, 2 cm Kunyit
3 cm Lengkuas, 1 Sereh-geprek, Mnyk syr    2 cm Jahe, 2 Cabai merah
Pelengkap:                                                                
Telur Asin, Kerupuk udang, Sambal, 100 gr Toge pendek, Daun Kemangi

Cara membuat
-   Pecahkan kluwak, ambi isinya. Rendam dng air hangat hingga agak empuk, tiriskan kmd hlskan. Tumis bumbu hls, kluwak, sereh, lengkuas, daun jeruk & salam dng minyak syr.
-   Didihkan air+kaldu, mskkan tumisan, gula jawa, air asam, kentang & daging. Masak sampai daging empuk, beri daun bawang. Apabila air kurang, tambahkan dng air hangat sesuai selera. Angkat
-   Penyajian: Taburi toge. Hidangkan dng daun kemangi, sambal, kerupuk & telur asin.

Ingredients
350 gr Flanks meat-cut, 1 tsp Brown sugar   Grind into a paste:
100 gr Potatoes-dice cut, 5 Kluwak nuts       -  1 tsp Sugar, 6 Shallots, 1 tsp Pepper
800 ml Water+2 tsp Beef Broth powder        -  2 cm Ginger, 2 cm Turmeric, 2 tsp Salt
1 tsp Tamarind juice, 3 Bay leaves, Veg.oil  -  3 cloves Garlic, 1 tsp Coriander
3 cm Galangal, 1 Lemongrass-bruised              -  2 red Chilies, 4 Candlenuts
5 Kaffir lime leaves, 1 Green onion-cut
Complements:
100 gr Bean sprouts, Lemon Basil leaves, Salted Eggs, Shrimp crackers, Chili paste

Directions
-   Break the kluwak shells & take the nuts out, then soaked it in warm water until softened. Drain & then grind the nuts. Sauté ground spices, kluwak, lemongrass, galangal, lime leaves & bay leaves with vegetables oil
-   Boil the water & broth powder, put in sautéed spices, brown sugar, tamarind juice, potatoes & meat. Cook until the meat tender. Put in green onion. Add in some warm water if the water reduced too much. Remove from the heat.
-   Serving: Sprinkle the soup with bean sprouts, served with lemon basil leaves, chili paste, shrimp crackers & salted eggs.

Soto Betawi (Beef in Coconut Soup Betawi Style)

Bahan
-  ½ kg Daging+½ kg Jeroan (1 kg daging)         -  2 Belimbing wuluh-belah 2 (optional)
-  ½ kg Tulang soup sapi, 2 cm Jahe, 2 lt Air    Haluskan:
-  3 Daun Salam, 4 Daun Jeruk, 3 st Gula mrh   -  1 st Ketumbar & 8 Kemiri-sangrai
-  1 Pekak, 2 Sereh-geprek, 1 sm Kecap mns     -  ½ st Jintan & 2 st Lada-sangrai
-  250 ml Santan, 250 ml Susu, 1 sm Mentega   -  1 st Pala, 2 cm Kunyit, 2 Cabai mrh
-  10 cm Kayu manis, 4 cm Lengkuas-geprek      -  8 Baw.mrh, 4 Baw.pth, 2 st Gula mrh
-  2 Asam, 1 Kapulaga, 2 Tomat-iris, Minyak      Pelengkap:
-  2 sm Kelapa parut-sangrai & hlskan, Garam     -  Sambal, Bawang goreng
-  3 Kentang-ptg2 & goreng, 2 Dn.baw-iris        -  Air jeruk nipis, Emping

Cara membuat
-   Potong besar2 daging & jeroan. Masak tulang, daging, jeroan, kayu manis, kapulaga, pekak, sereh, jahe & lengkuas dng air sampai bumbu meresap & daging empuk. Angkat daging, tiriskan kmd pth2 dadu uk ± 1 cm. Buang bumbu2 & tulang. Simpan 1½ liter kaldunya.
-   Larutkan 1 Asam, gula jawa & garam secukupnya dng 1 cup air. Remas2 daging dng larutan tsb. Biarkan min. 1 jam. Goreng daging di minyak panas hingga kecoklatan. Angkat, sisihkan.
-   Tumis bumbu hls & salam dng minyak hingga harum. Beri mentega, aduk hingga mentega leleh.
-   Mskkan bumbu hls, 1 asam, dn. jeruk, kelapa halus & belimbing wuluh ke dlm kaldu. Masak hingga rasa menyatu. Beri santan, susu, potongan daging & garam secukupnya sambil sesekali diaduk hingga mendidih. Angkat.
-   Susun kentang goreng, tomat & daun baw. di mangkuk2 saji, beri daging & kuahnya. Taburi bawang goreng. Hidangkan dng sambal, emping & irisan jeruk nipis.

Ingredients
-  ½ kg Beef+½ kg Offal (1 kg Beef), fry. Oil   -  250 ml Milk, 3 Potatoes-cut; then fry
-  2 tbsp grated Coconut-roasted, then grind    Grind into a paste:
-  ½ kg Beef soup bones, 2 cm Ginger            -  8 Candlenuts+1 tsp Coriander-roasted
-  4 Kaffir lime leaves, 1 tbsp Butter            -  ½ tsp Cumin+2 tsp Peppercorns-roasted
-  4 cm Galangal & 2 Lemongrass-bruised         -  2 tsp Palm sugar, 2 Red chilies
-  1 Star anise, 10 cm Cinnamon, 1 Cardamom   -  4 cloves Garlic, 2 cm Turmeric
-  250 ml Coconut milk, 2 Tamarind pulp, Salt   -  1 tsp Nutmeg, 8 Shallots
-  1 tbsp sweet Soy sauce 3 tsp Palm sugar      Complements
-  2 Green onions & 2 Tomato-cut, 2 lt Water  -  Melinjo oats cracker, Lime juice
-  3 Bay leaves, 2 Bilimbi fruit-halved (option)   -  Chili paste, Fried Onion

Directions
-   Cut the beef (& offal) into big chunks. Boil the bones, beef (& offal), cinnamon, cardamom, star anise, lemongrass, ginger & galangal until the flavor blended & the meat tender. Remove the meat from the broth; drain & then cut them into ± 1 cm dice form. Save 1½ liter of the broth. Discard the bones & spices.
-   Dissolve 1 tamarind pulp, palm sugar & enough salt in 1 cup of water. Squeeze the meat with the mixture. Let them stand for min 1 hour. Fry the meat in hot oil until they becomes a bit brown. Remove from the oil, drain & set aside.
-   Sauté the spices paste & bay leaves with little oil until fragrant. Stir in the butter until it melts.
-   Put the spices paste mixture, 1 tamarind pulp, kaffir lime leaves, ground coconut & bilimbi fruit into the broth pot. Cook until the flavor blended. Add in the coconut milk, milk, meat & enough salt to taste. Bring it to a simmer, stir occasionally. Remove from the heat.
-   Place the fried potatoes, sliced tomatoes & green onions in serving bowls. Pour in the soup & meat over. Sprinkle with fried onions. Serve the soup with the complements.

Tahu Goreng Crispy (Crispy Fried Tofu)

Bahan
- 250 gr Tahu-potong2 setbl 1 cm, lalu ptg jadi 2
- 2 Telur-kocok, 2 Bawang putih-hlskan, Garam
- Minyak gorengPanir & Panko secukupnya
- Lada bubuk & Ketumbar bubuk secukupnya

Cara membuat
Campur baw. putih, lada, garam, ketumbar & air secukupnya, lalu rendam tahu ± 20 mnt.
Campur panir dng sedikit ketumbar bubuk, garam & lada. Tiriskan tahu, celupkan ke telur, lalu gulingkan di panir, ulangi proses sekali lagi tetapi kemudian gulingkan tahu di panko. Goreng di minyak panas dng api sedang sampai kekuningan & crispy.

Ingredients
- 250 gr Tofu-sliced into 1 cm thickness & then halved
- 2 Eggs-beaten, 2 cloves Garlic-grind, Frying fat, Salt 
- enough Breadcrumbs & Panko, Pepper, ground Coriander

Directions
Blend garlic, pepper, salt, coriander with enough water to cover the sliced tofu. Soak tofu in the mixture for ~ 20 minutes. Drain tofu & set aside.
Season breadcrumbs with coriander, pepper & salt; set aside. Dip sliced tofu in eggs; then roll in bread crumbs. Repeat the process once again but this time roll tofu in the panko. Fry tofu in hot frying fat over medium heat until golden brown & crisp.

Ayam/Babi Rica Rica (Manadonese Spicy Grilled Chicken/Pork)

Bahan

  • 500 gr Ayam/Daging Babi-ptg2, 100 ml Air
  • 2 Jeruk limau, 2 Sereh-geprek, 2 Pandan
  • 10 Daun jeruk, 2 sm Air jeruk nipis
  • 30 Daun kemangi, 200 ml Santan
Haluskan:

  • 4 Bawang putih, 10 Rawit, 1 st Lada
  • 1 Tomat, 6 Bawang merah, 2½ st Garam
  • 1 st Gula, 6 cm Jahe, 10 Cabai merah

Cara membuat

  • Lumuri ayam dng 1 st garam & air nipis, diamkan 30 menit. Bakar/goreng ayam sampai matang.
  • Tumis bumbu halus. Beri santan, sereh, daun jeruk, pandan, gula, masak hingga berminyak. Mskkan ayam/daging, masak hingga kuah mengental. Beri air jrk limau & kemangi, masak lagi sebentar saja.

Ingredients

  • 500 gr Chicken/Pork fillet-cut
  • 2 Kaffir lime, 2 Lemon grass-bruised
  • 2 Pandan leaves, 30 Lemon basil leaves
  • 2 tbsp Lime juice, 200 ml Coconut milk
  • 100 ml Water, 10 Kaffir lime leaves
Grind into a paste:

  • 4 cloves Garlic, 1 tsp Pepper
  • 6 cm Ginger, 10 Red chilies
  • 10 Bird`s eye chilies, 6 Shallots
  • 1 tsp Sugar, 1 Tomato, 2½ tsp Salt

Directions

  • Rub the chicken with 1 tsp salt & lime juice, let it stand for 30 mins; then grill/fry until it cooked.
  • Sauté ground spices. Add in the coconut milk, lemongrass, sugar, lime & pandan; simmer until the coconut milk becomes greasy. Put in the chicken; cook until the gravy thickens, almost dry. Stir in basil leaves & kaffir lime juice; cook just for awhile.

Kering Kentang (Sweet & Spicy Fried Potato Chips/Sticks)


In Indonesian & English

Bahan
6 Kentang sdng-ptg korek api            -  1 st Air nipis, ½ st Ketumbar bbk, Minyak syr
125 gr Kacang tanah tanpa kulit       Haluskan:
3 sm Santan, 2 Daun salam                -  2 Cabai merah, 1 Cabai keriting
35 gr Gula jawa, 2 st Garam             -  2 Bawang putih, 1 Bawang merah
3 Bawang putih-hlskan & bagi 2        -  1 st Ketumbar, 1 cm Lengkus-parut

Cara membuat
-   Campur kentang dng ½ bag. baw.putih, ketumbar bbk & ½ st garam. Diamkan 15 mnt, goreng. Rendam Kacang di air secukupnya dng sisa baw.putih & ½ st garam ± 15 mnt, goreng. Sisihkan
-   Tumis bumbu halus, beri santan & bahan lain. Masak diapi kecil sambil aduk2 sampai mengental
-   Angkat, campur di kentang+kacang sesendok2 sambil diaduk rata.

Ingredients
6 Potatoes-thinly sliced/matchstick strips     -  ½ tsp Coriander pwd
125 gr skinless Peanuts, 2 tsp Salt                 Grind into paste:
1 tsp Lime juice, 3 tbsp Coconut milk            -  2 Red chilies, 1 Cayenne pepper
35 gr Coconut Sugar, Vegetable oil                 -  2 cloves Garlic, 1 tsp Coriander
3 cloves Garlic-grind, 2 Bay leaves                  -  1 Shallot, 1 cm Galangal-grated

Directions
-   Mix potatoes with half of ground garlic, coriander pwd & ½ tsp salt. Let it stand for 15 mins; drain & deep fry the potatoes. Mix enough water to cover the peanuts with remaining ground garlic & ½ tsp salt. Soak peanuts in the mixture ± 15 mins; drain & then deep fry the peanuts. Set aside.
-   Sauté ground spices; add in coconut milk & other ingredients. Cook over low heat, stir constantly until the sauce thickens. Remove from heat. Mix the peanuts & potatoes. Pour the mixture into the potatoes & peanuts, one spoon at a time, stir constantly.

Sambal Godok Betawi/Sayur Labu (Chayote Stew Betawi Style)

Bahan
- 1 Labu siam-iris korek api, 1 st Gula           Haluskan:
- 10 Kac.panj-ptg2 1 cm, 1 Sereh-geprek      - 8 Bawang merah, 2 Cabai keriting
- 450 ml Santan+200 ml Air, 3 Daun jeruk     - 3 Bawang putih, 6 Cabai merah
- ¼ st Lada, 1 st Kaldu bbk, 2 Daun salam     - 2 cm Jahe, 2 cm Lengkuas
- 5 Bawang merah-iris2, Garam                Pelengkap: Lontong, Telur Goreng, Kerupuk

Cara membuat
Remas2 labu dng 1 st garam hingga layu. Bilas. Tumis bawang merah iris sampai harum.
Mskkan bumbu hls, sereh, daun salam, daun jeruk, labu, tumis matang. Tuang santan, beri kacang panjang, garam, lada, kaldu & gula secukupnya. Masak sampai mendidih.
Angkat & siramkan di atas potongan Lontong (klik pada link utk resepnya). Sajikan dng telur goreng & kerupuk.

Ingredients
- 1 Chayote-long & thinly sliced, Salt          Grind into a paste:
- 10 Long beans-1 cm cut, 1 tsp Sugar       - 2 cm Galangal, 2 cm Ginger, 3 cloves Garlic
- 450 ml Coconut milk+200 ml Water           - 6 Red chilies, 8 Shallots, 2 Cayenne peppers
- 5 Shallots-thinly sliced, 2 Bay leaves       Complements:
- 1 tsp Broth pwd, 3 Kaffir lime leaves       - Rolled & Compressed Rice Cake, Crackers
- ¼ tsp Pepper, 1 Lemon grass-bruised        - Boiled eggs-deep fried until golden browned

Directions
Squeeze chayote with a bit salt to wither. Rinse with water & drain. Set aside.
Sauté sliced shallots until fragrant. Add in the spices paste, lemongrass, bay leaves, lime leaves & chayote. Stir well until chayote cooked. 
Pour in Coconut milk; add in long beans, salt, pepper, broth pwd & sugar. Cook until bubbling.
Remove from the heat; pour the stew over sliced Rolled & Compressed Rice Cakes (click on the link for the recipe). Served with fried eggs & crackers.

Cah Pak Choy Ayam Jamur (Stir-Fried Chicken, Mushroom & Bok Choy)

Bahan
-  ½ Paprika & 250 gr Pak Choy-ptg2   -  1 st Kecap ikan, 2 cm Jahe-geprek
-  150 gr Ayam-iris2, 1 Daun salam    -  1 st Kecap asin, ½ st Lada, Garam
-  3-4 Jamur Champignon-ptg           -  2 st Maizena+2 sm Air
-  ½ Bawang Bombay-cincang            Bhn Perendam
-  2 Baw.putih-haluskan, 250 ml Air    -  1 Baw.pth-hlskan, ¼ st Ketumbar
-  2 st Saus tiram, 1 st saus Soya      -  1 sm saus Soya, 2 st Saus tiram, 1 st Kcp mns


Cara membuat

-   Rendam ayam di bahan perendam selama ± 20 mnt. Tumis bawang putih hls & bombay, mskkan ayam, paprika, jamur, jahe & salam. Masak hingga ayam berubah warna.
-   Beri air, kecap2, saus tiram, lada. Didihkan, mskkan pak choy & garam secukupnya. Masak 2-3 mnt sambil diaduk. Mskkan maizena, masak & aduk hingga saus mengental.

Ingredients
-  250 gr Bok Choy-cut, 1 Bay leaves      -  2 tsp Corn starch+2 tbsp Water
-  150 gr Chicken-thinly sliced, Salt       -  1 tsp salty Soy sauce
-  3-4 Champignons-cut, ½ tsp Pepper     Marinate sauce:
-  ½ Onion-chopped, ½ Paprika-cut         -  1 clove Garlic-grind, ¼ tsp ground Coriander
-  2 cloves Garlic-grind, 250 ml Water    -  2 tsp Oyster sauce, 1 tbsp Soy sauce
-  2 tsp Oyster sauce, 1 tsp Soya sauce   -  1 tsp sweet Soy sauce
-  1 tsp Fish sauce, 2 cm Ginger-crushed

Directions
-   Combine all marinate ingredients & marinate chicken for 20 min. Sauté garlic & onion; add in chicken, paprika, champignons, ginger & bay leaves. Cook until chicken colour changed.
-   Put in water, soy sauces, fish sauce, oyster sauce, pepper. Bring it to a simmer, put in bok choy & salt. Cook for 2-3 minutes. Pour in the corn starch mixture; stir & cook until the sauce becomes rather thick.
