Nasi Kuning-Tumpeng Kuning (Indonesian Yellow Rice-Cone Shaped Yellow Rice)





In Indonesian & English

Bahan
1 kg Beras, 200 gr Ketan, 2 Pandan     -  1 Cabai mrh-belah & buang biji     
1 lt Santan, 3 st Garam, 2 Dn jeruk   Haluskan:
3 Dn salam, 1 st air Jeruk nipis            - 4 Baw.putih, 2 sm Kunyit parut
-  2 Sereh-geprek, 1 st Ketumbar bbk     - 3 cm Jahe, ½ Baw.bombay/2 Baw.merah

Cara membuat
-   Campur bumbu hls dng santan, aduk. Masukkan semua bahan ke dalam rice cooker. Nasi matang dlm 10-15 menit. Kalau kurang pulen, tambahkan sedikit air & masak lagi.
-   Bila hendak membuat tumpeng, mskkan nasi ke cetakan berbtk kerucut, tekan2 utk memadatkan nasi kmd ltkkan di atas tampah/loyang panggang datar beralas dn. pisang.
-   Susun hidangan pelengkap di sekeliling nasi, hias & sajikan. Ingredients
1 kg Rice, 200 gr Sticky Rice        -  1 lt Coconut milk, 2 Lemongrass-bruised
2 Kaffir lime leaves, 3 tsp Salt      -  1 Red Chili-halved & discard the seeds
3 Bay leaves, 2 Pandan leaves        Grind into a paste:
1 tsp Coriander powder                     -  3 cm Ginger, ½ small Onion/2 Shallots
1 tsp Lime juice                                  -  2 tbsp grated Turmeric, 4 cloves Garlic

Directions
-   Mix ground spices with coconut milk, stir well. Put all ingredients into a rice cooker & cook. Rice cooked in 10-15 min. If the rice still a bit hard, put a bit more water & cook again.
-   If U want to make cone shaped rice, put the rice into a big cone mold. Press the rice to compact the rice. Place them in a baking sheet covered with Banana leaves.
-   Place several side dishes around the rice, garnish them & serve. Sambal Goreng Krecek (Beef Skin Crackers in Spicy Sauce)

-  75 gr Krecek, 2 Daun Jeruk                      Haluskan:
-  2 sm Kacang tolo-rebus, 2 sm Minyak      -  2 Kemiri, 1 Baw.pth, 2 Cabai mrh
-  50 gr Tempe/Tahu-ptg dadu & goreng     -  5 Cabai Keriting, 1 cm Kencur (opt)
-  200 ml Santan, ½ st air Jeruk limau        -  1 Tomat kcl, 8 Baw.mrh, Garam, Gula

Cara membuat
-   Rendam kerupuk kulit dlm air hingga kerupuk mengembang & empuk, peras lalu tiriskan. Tumis bumbu halus & daun jeruk, beri santan. Mskkan krecek, tempe/tahu & kacang.
-   Aduk terus, masak sampai krecek empuk & santan terserap, beri air limau. Aduk rata. Sajikan dengan nasi hangat & Gudeg Jogjakarta (klik pada link utk resepnya) atau sajikan dengan Lontong (klik pada link utk resepnya).

Ingredients
-  75 gr Beef skin crackers *                              Grind into a paste:
-  2 tbsp Black Soy beans-boiled                       -  2 Red chilies, 5 Cayenne peppers, Salt
-  50 gr Tempe/Tofus-dice cut & fried             -  2 Candlenuts, 1 cloves Garlic
-  200 ml Coconut milk, 2 tbsp Frying oil          -  1 small Tomato, 8 Shallots, Sugar
-  2 Kaffir lime leaves, ½ st Kaffir lime juice  -  1 cm Lesser galangal (optional)

Directions
-   Soak the skin crackers in water until the crackers swollen & soft, squeeze a bit to drain them. Sauté the spices paste & kaffir lime leaves with frying oil; pour in coconut milk. Add in crackers, tempe/tofu & soy beans. Stir constantly.
-   Cook until the crackers become soft & coconut milk reduced. Stir in kaffir lime juice. Serve the dish with steamed rice & Javanese Green Jackfruit Stew (click on the link for the recipe) or serve it with Rolled & Compressed Rice Cakes (click on the link for the recipe)
* If U can`t found the un-fried Beef skin crackers, buy a fried one; skip the soaking procedure.

Cah Kangkung Daging Sapi (Stir-Fried Beef & Water Spinach

Bahan
-  2 ikat Kangkung-petik, 1 Tomat-ptg 8    -  1 sm Minyak wijen, ½ st Lada, 1 st Garam
-  200 gr Daging-iris tipis, 100 ml Air        Haluskan:
-  1 cm Lengkuas & 1 cm Jahe-geprek        -  3 Bawang putih, 3 Bawang merah
-  5 Cabai merah-ptg, 1 sm Kecap manis    -  1 cm Kunyit, 1 st Terasi goreng
-  1 Sereh-geprek, 1 sm Saus tiram


Cara membuat
-   Tumis bumbu halus & cabai hingga harum. Masukkan daging, tumis sampai berubah warna.
-   Beri bahan lain, beri sedikit air, didihkan. Masukkan kangkung & tomat, masak hingga agak layu.

Ingredients
-  2 bundle Water spinach-cut                       -  1 cm Ginger-crushed, 1 Tomato-cut
-  200 gr Beef meat-shredded, 1 tsp Salt   -  1 tbsp Sesame oil, 1 tbsp Oyster sauce
-  1 cm Galangal & 1 Lemongrass-bruised     Grind into a paste:
-  5 Red Chilies-sliced, 100 ml Water           -  3 cloves Garlic, 1 cm Turmeric
-  1 tbsp sweet Soy sauce, ½ tsp Pepper      -  3 Shallots, 1 tsp Shrimp paste

Directions
-   Sauté spices paste & chilies until fragrant. Add in the meat, cook until the meat color change.
-   Pour in water & other ingredients; bring it to a simmer. Stir in water spinach & tomato. Cook until the vegetables wilted.


Soup Kacang Hitam/Tolo (Black Bean Soup)


In Indonesian & English 

Bahan
  • 50 gr Kacang hitam, 50 gr Tahu-potong dadu
  • 1 Cengkeh-geprek, ½ st Lada bubuk, Minyak
  • 1 Wortel-potong dadu, 1 Daun bawang-iris
  • 3 Bawang merah & 1 Bawang putih-haluskan
  • 1 cm Kencur-haluskan, ¼ st Pala bubuk
  • 1 st Garam, 2 st Kaldu bubuk


Cara membuat
  • Rendam kacang dlm air selama 8 jam sampai semalaman. Buang air perendam & masukkan kacang di panci. Beri air baru sampai ketinggian ± 5 cm di atas kacang. Rebus di api besar sampai mendidih. Pindahkan api ke kecil, tutup panci. Masak sampai kacang mulai empuk. Periksa setelah 1 jam, bila kering, tambahkan 1 cup air panas. Tutup lagi & teruskan memasak.
  • Tumis bumbu halus. Setelah kacang mulai empuk, masukkan tumisan, kaldu & bumbu lain ke air rebusan. Teruskan memasak sampai kacang benar2 empuk & sebagiannya pecah. Mskkan tahu & beri garam secukupnya. Masak sampai rasa menyatu. Tambahkan sayuran, masak lagi sebentar.


Ingredients
  • 50 gr Black beans, 1 Clove-crushed, 1 tsp Salt
  • 50 gr Tofu-diced small, 2 tsp Broth powder
  • 3 Shallots & 1 clove Garlic-grind, Frying oil
  • 1 Carrot-diced small, 1 Green onion-sliced
  • ½ tsp ground Pepper, ¼ tsp ground Nutmeg
  • 1 cm Lesser galangal-grind


Directions
  • Soak beans in water for 8 hours until overnight. Drain & then put the beans in a pot. Add in enough water so that it comes ~ 5 cm above the beans. Bring it to a boil over high heat. Reduce the heat to low & cover the pot. Simmer until the beans softened. Check after 1 hour; if the beans seem dry, add a cup of hot water. Put the lid back & continue with cooking.
  • Meanwhile, sauté ground spices. After the beans softened, put sautéed spices, broth powder & other spices into the soup. Continue cooking it until the beans become very soft & some of the beans break down. Put the tofu in & season with enough salt. Cook until the flavor blended. Add in the vegetables. Cooking it again for awhile.

Ayam Panggang/Bakar Bumbu Santan (Baked/Grilled Chicken in Coconut Milk Sauce)

Bahan
1 Ayam-ptg jadi 8, 500 ml Santan             Haluskan:
4 Dn jeruk, 2 Dn Salam, 1 sm Kcp mns    -  6 Baw.putih, 8 Baw.merah, 1 st Lada
1 Sereh & 1 cm Lengkuas-geprek                -  6 Kemiri, 1 cm Jahe, 1 st Ketumbar
2 sm Air asam, 1 Daun bawang-iris            -  6 Cabai mrh, 1 sm Gula, 2 sm Garam
Sambal kecap:
5 sm Kecap manis, 10 Rawit-ptg
1 Jeruk limau-peras

Cara membuat
-   Tumis bumbu halus, tambahkan sereh, daun salam, daun jeruk & lengkuas. Mskkan ayam, aduk sampai berubah warna, tambahkan santan & air asam, masak sampai saus berkurang & kental dng api sedang. Beri kecap, aduk. Keluarkan ayamnya. Mskkan daun bawang ke saus & aduk.
-   Panaskan oven 180 °C. Panggang ayam di oven sampai kecoklatan atau dibakar di bara arang, sesekali ulas dng saus santan. Hidangkan ayam dng saus santan & sambal kecap.
-   Sambal Kecap: Campur semua bahan, tekan2 rawit potong agar lebih pedas.

Ingredients
1 Chicken-cut into 8                               Grind into a paste:
2 tbsp Tamarind juice                             -  6 cloves Garlic, 1 cm Ginger, 2 tbsp Salt
1 cm Galangal-crushed                            -  1 tsp Coriander, 6 Red Chilies, 8 Shallots
1 Green onion-cut, 2 Bay leaves          -  6 Candlenuts, 1 tsp Pepper, 1 tbsp Sugar
1 tbsp sweet Soy sauce                          Spicy sauce
500 ml Coconut milk                                -  10 Bird`s eye chilies-thinly sliced
4 Kaffir lime leaves                                 -  1 Kaffir lime, 5 tbsp sweet Soy sauce
1 Lemongrass-bruised

Directions
-   Sauté ground spices, add in the lemongrass, bay leaves, kaffir lime leaves & galangal. Stir in the chicken until the color change. Pour in coconut milk & tamarind juice; cook over medium heat until the liquid reduced & thickened. Stir in sweet soy sauce. Remove the chicken from the sauce. Mix the green onion into the coconut sauce.
-   Preheat the oven to 180 °C. Bake/grill the chicken just until brown or you also can grill them on charcoal bbq until brown; brush with the sauce in between. Serve the chicken with the coconut sauce & spicy sauce.
-   Spicy sauce: Mix the chilies, soy sauce & kaffir lime juice; press the chilies a bit.

Urap Sayuran (Vegetable Salad with Grated Coconut)


In Indonesian & English

Bahan

  • 1 Jagung kecil-rebus & sisir, 1 Daun salam
  • 1 Wortel kecil-potong korek api & kukus
  • 4 lembar Kol-iris & rebus, 3 Daun jeruk
  • 6 Kacang panjang-potong & rebus
  • 1 ikat Kangkung/Bayam-potong & rebus
  • 2 batang Kemangi-petik daunnya
  • 60 gr Kelapa parut (+ 2 sm santan*)
Haluskan:

  • 1 Bawang putih, 1 Cabai merah
  • 2 Bawang merah, 1 Cabai keriting
  • 3 st Gula, 2½ st Garam, 2 cm Kencur

Cara membuat

  • Campur bumbu halus dengan kelapa. Masukkan daun jeruk & salam. Kukus matang.
  • Beri daun kemangi. Campur kelapa berbumbu kukus dengan jagung & semua sayuran.
  • * Bila menggunakan kelapa kering, campur dulu dng santan sebelum dikukus.

Ingredients

  • 1 small size Corn-boiled, 3 Kaffir lime leaves
  • 1 small Carrot-julienned & steamed
  • 4 sheets Cabbage-sliced & boiled
  • 6 String beans-cut & boiled, 1 Bay leaf
  • 1 bundle of Water Spinach/Spinach-cut & boiled
  • Leaves of 2 stalks Lemon basil
  • 60 gr grated Coconut (+ 2tbsp Coconutmilk*)
Grind into a paste:

  • 1 clove Garlic, 2 cm Lesser galangal
  • 2 Shallots, 1 Cayenne pepper
  • 3 tsp Sugar, 1 Red chili, 2½ tsp Salt

Directions

  • Cut kernels off the corn; set aside. Mix the spices paste with grated coconut. Put in kaffir lime leaves & bay leaf. Steam until it cooked.
  • Add in lemon basil leaves. Mix steamed coconut with all vegetables & corn kernels.
  • * If you`re using dry grated coconut, mix it first with the coconut milk before steaming

Ayam Bumbu Kuning Goreng (Aromatic Yellow Fried Chicken)

Bahan
1 Ayam-ptg jadi 8, 3 Daun jeruk               Hlskan
2 st Asam +air, 250 ml Air kelapa             -  5 Kemiri, 4 cm Kunyit, 2 cm Jahe
5 cm Lengkuas-parut, 1 Sereh-geprek      -  4 Baw.putih, 2 st Garam, 1 st Lada
3 Daun salam, 250 ml Air, Minyak             -  6 Baw.merah, 2 st Ketumbar

Cara membuat
-   Lumuri ayam dng bumbu hls & lengkuas, tusuk dagingnya dng garpu/kerat agar bumbu meresap. Diamkan ½ jam. Mskkan di panci, beri air, air kelapa, daun jeruk, salam, sereh, asam. Masak hingga air tersisa sedikit, Angkat ayam.
-   Panaskan minyak yg banyak di wajan, goreng ayam hingga kuning kecoklatan.

Ingredients
1 Chicken-cut into 8, 3 Bay leaves           Grind into a paste:
250 ml Water, 1 Lemongrass-bruised      -  5 Candlenuts, 2 cm Ginger
250 ml Coconut juice, frying Oil                -  4 cloves Garlic, 2 tsp Salt
3 Kaffir lime leaves, 2 tsp Tamarind        -  6 Shallots, 2 tsp Coriander
5 cm Galangal-grated                                    -  4 cm Turmeric, 1 tsp Pepper

Directions
-   Rub the chicken with spices paste & galangal. Pokes the chicken with a fork/make diagonal slashes; let it stand for ½ hour. Put the chicken in a pan; pour in water, coconut juice, lime leaves, bay leaves, lemongrass & tamarind. Cook until the liquid almost dry. Remove the chicken from the pan.
-   Heat the frying oil & then deep fry the chicken until golden brown.
