Sayur Labu Siam (Chayote Stew)


In Indonesian & English

Bahan
- 250 gr Labu siam-ptg korek api               - 3 Cabai hijau/merah-iris, 2 Daun salam
- 6 Kacang panjang-ptg2, 300 ml Air        Haluskan:
- 200 gr Daging tetelan-ptg2, 2 st Gula   - 2 Bawang putih, 6 Bawang merah
- 300 ml Santan kental, 2 st Kaldu bbk    - 3 Cabai mrh, 2 cm Kunyit, ½ st Lada
- 1 Sereh & 2 cm Lengkuas-geprek            - 2 Kemiri, 1 cm Jahe, 1½ st Garam
- 2 Daun jeruk, 1 sm Air asam

Cara membuat
-   Campur & remas2 labu siam dng sedikit garam hingga layu. Bilas dengan air, tiriskan.
-   Tumis bumbu hls & cabai ptg. Beri lengkuas, sereh, air asam, daun jeruk & salam, aduk rata.
-   Tuang air, santan, gula & daging. Masak hingga santan mendidih.
-   Masukkan labu siam & kacang panjang, aduk rata. Masak hingga semua bahan matang.

Ingredients
-  250 gr Chayote-shredded, 300 ml Water    Grind into a paste:
-  6 Long beans-cut, 2 Bay Leaves                     -  2 cloves Garlic, 1 cm Ginger, tsp Salt
-  200 gr Flanks meat-sliced, 2 tsp Sugar       -  2 Candlenuts, 6 Shallots, ½ tsp Pepper
-  300 ml Coconut milk, 3 Chilies-sliced            -  2 cm Turmeric, 3 Red Chilies
-  1 Lemongrass & 2 cm Galangal-crushed    
-  2 Kaffir lime leaves, 1 tbsp Tamarind juice
-  2 tsp Chicken broth powder


Directions
-   Squeeze chayote with a bit salt to wither. Rinse with water & drain. Set aside.
-   Saut√© the spices paste & sliced chilies. Add in galangal, lemongrass, tamarind juice, bay leaves & kaffir lime leaves, stir well. Pour in water & coconut milk. Add in sugar & meat. Simmer until the coconut milk boiled.
-   Put in chayote & long beans, mix well. Boil until all are cooked.
