Kering Tempe (Sweet & Spicy Deep Fried Tempeh)


In Indonesian & English

Bahan
2 Sereh-geprek, 3 Daun salam            -  3 Bawang putih & 1 st Garam-Hlskan
5 sm Gula+2 sm Gula jawa                    -  ½ cm Jahe & 1 Cabai keriting (opt)-Hlskan
½ st Ketumbar, 5 st Air asam             Goreng kering:
2 cm Laos-geprek, 100 ml Air            -  500 gram Tempe-iris kecil, 250 gr Kac.tanah
½ st Kaldu ayam bbk, Minyak              -  5 Cabai merah & 10 Baw.mrh-iris tipis

Cara membuat
-   Tumis bumbu halus, sereh laos & daun salam dng 2 sm minyak. Mskkan gula jw, gula, ketumbar, air asam, kaldu & air. Aduk terus hingga saus gula kental & berambut.
-   Mskkan tempe, baw.mrh, kacang & cabai goreng, aduk hingga semua tersaput saus gula

Ingredients
2 Lemongrass-bruised, 3 Bay leaves     -  3 cloves Garlic & ½ cm Ginger-grind
2 tbsp Coconut/brown sugar                   -  1 tsp Salt, 1 Cayenne pepper (option)-grind
5 tsp Tamarind juice, 5 tbsp Sugar     Deep fried:
½ tsp Chicken broth powder                    -  500 gr Tempeh-small & thinly sliced
2 cm Galangal-crushed, Frying oil         -  10 Shallots-thinly sliced, 250 gr Peanuts
½ tsp Coriander pwd, 100 ml Water     -  5 Red chilies-thinly sliced

Directions
-   Sauté ground spices, lemongrass, galangal & bay leaves with 2 tbsp frying oil. Add in brown sugar, sugar, coriander, tamarind juice, broth, salt & water. Stir constantly & cook until the sauce becomes thick.
-   Put in deep fried tempeh, peanuts, shallots & chilies. Stir until the sauce cover it all.
