Rendang Ayam (Indonesian Dried Chicken Curry)


Bahan
4 ptg Paha ayam, 700 ml Santan            2 Daun salam, 3 Daun jeruk
-  ½ st Kapulaga bubuk, 1 Asam                   2 sm Kelapa parut-sangrai
-  1 cm Lengkuas & 2 Sereh-geprek           Haluskan:
1 sm Ketumbar, 8 cm Kayu manis           -  3 Bawang putih, 1 cm Jahe
1 st Adas, 2 st Garam, 1 st Gula          -  6 Bawang merah, 5 Kemiri
1 st Pala, 1 st Klabet, Minyak                -  3 Cabai merah, 1 cm Kunyit

Cara membuat
-   Tumis bumbu hls. Masak santan dng bumbu halus, asam, daun2 & bumbu lain. Aduk2 sampai santan mulai mengental & berminyak. Masukan potongan2 ayam & kelapa prt.
-   Masak dengan api kecil hingga santan & bumbu mengering sambil sesekali diaduk.

Ingredients
4 Chicken thighs, 8 cm Cinnamon                     ½ tsp Cardamom powder
-  1 Tamarind, 2 Bay leaves, 2 tsp Salt             1 tsp Fenugreek leaves
-  1 cm Galangal & 2 Lemongrass-bruised          Grind into a paste:
1 tbsp Coriander, 700 ml Coconut milk          -  3 cloves Garlic, 1 cm Ginger
1 tsp Fennel, 1 tsp Sugar, frying Fat           -  5 Candlenuts, 6 Shallots
2 tbsp grated Coconut-roasted                        -  3 Red Chilies, 1 cm Turmeric
3 Kaffir lime leaves, 1 tsp Nutmeg

Directions
-   Sauté the spices paste. Cook coconut milk with sautéed spices, tamarind, leaves & other spices. Stir until coconut milk thickens. Add in the chicken & grated coconut.
-   Cook & stir over low heat until the coconut milk & spices becomes rather dry.
