Soup Bakut Sawi Asin (Ribs & Pickled Bok Choy Soup)

Bahan
-  1 bks Sawi Asin-cuci & ptg2, 1 lt Air    -  400 gr Iga babi/sapi, 1 btg Seledri-ptg 4
-  5 Baw. putih-cincang, 3 sm Kecap asin   -  2 cm Jahe-cincang, 1 sm Minyak wijen
-  1 st Lada, 1 st Gula, Garam                    -  2 Rawit, 2 Baw. mrh-cincang, Minyak

Cara membuat
-   Rebus iga sampai empuk. Ambil 500 ml kaldunya. Tumis bawang putih & jahe dng sedikit minyak.
-   Mskkan tumisan dlm kaldu, beri seledri, 2 sm kecap asin, lada, gula. Didihkan, masak ± 10 mnt, buang seledrinya. Masukkan sayur asin, minyak wijen & garam secukupnya. Aduk rata sampai rasa menyatu. Angkat.
-   Sambal rawit: Seduh rawit di air panas, tiriskan & potong2. Campur dng bawang mrh & 1 sm kecap asin. Tekan2 rawit & bawang dng sendok agar rasanya merata.

Ingredients
-  1 pack Pickled Bokchoy-washed,sliced    -  400 gr Pork ribs/beef, 1 tbsp Sesame oil
-  5 cloves Garlic-minced, 1 lt Water        -  2 cm Ginger-minced, 3 tbsp Soy sauce
-  1 tsp Pepper, 1 tsp Sugar, Frying oil     -  2 Bird`s eye chilies, 2 Shallots-chopped
-  1 stalk Celery-cut into 4, Salt

Directions
-   Boil the ribs until tender. Save 500 ml of broth, set aside. Sauté garlic & ginger with a little oil.
-   Put sautéed spices into the broth; add in celery, 2 tbsp soy sauce, pepper, sugar. Bring it to a simmer, cook 10 min; discard the celery. Stir in Bok choy, sesame oil & salt to taste until the flavor blended. Remove from the heat.
-   Chili: Soak chilies in boiled water, drain; slice them. Mix the chilies with shallots & 1 tbsp soy sauce. Press the chilies & shallots with a spoon to blend the flavor.
