Ayam Bakar Bumbu Rujak (Java Grill Chicken with Spicy Coconut Sauce)

Bahan
-  2 Dada Ayam-belah 2 & kerat2              Haluskan:
-  5 Daun jeruk-iris hls, 300 ml Santan    -  5 Baw.merah, 1 st Ketumbar, 4 Kemiri
-  1 Sereh & 2 cm Lengkuas-geprek           -  2 Baw.putih, 3 st Gula mrh, 3 Rawit
-  1 Jrk nipis-peras, 2 Daun Salam            -  2 cm Kunyit, 1 st air Asam, 1½ st Grm
-  1 Tomat-ptg, 1 sm Kecap mns                -  1 st Lada, 1 cm Kencur, 4 Cabai mrh
-  2 cm Jahe-geprek, Minyak

Cara membuat
-   Lumuri ayam dng air jrk, diamkan 20 mnt. Tumis bumbu hls, daun jeruk, salam, lengkuas, sereh.
-   Mskkan tomat & santan, didihkan di api sedang sambil diaduk2. Masak hingga santan mengental.
-   Mskkan kecap & ayam, masak ayam ½ matang. Angkat ayam, panggang 180°C di oven/di bakar sampai matang sambil sesekali diolesi bumbu. Sajikan beserta sisa bumbu, nasi hangat & lalapan.

Ingredients
-  2 Chicken breasts Fillet-halved                    Grind into a paste:
-  5 Kaffir lime leaves-small sliced, 1 Lime   -  2 cm Turmeric, 1 tsp Tamarind juice
-  1 Lemon grass & 2 cm Galangal-bruised     -  1 cm Lesser Galangal, 1 tsp Coriander
-  1 tbsp sweet Soy sauce, 2 Bay leaves        -  3 tsp Brown Sugar, 3 Bird`s eye chilies
-  1 Tomato-cut, 2 cm Ginger-crushed          -  1 tsp Pepper, 4 Candlenuts, 4 red Chilies
-  Frying oil, 300 ml Coconut milk                    -  2 cloves Garlic, 1½ tsp Salt, 5 Shallots

Directions
-   Make shallow diagonal slashes in the chicken breast pieces & then rub with lime juice. Let it stand for 20 mins. Sauté the spices paste, lime leaves, bay leaves, galangal & lemon grass.
-   Stir in tomato & coconut milk; bring it to a simmer over medium heat. Stir constantly until the coconut milk becomes rather thick.
-   Put in sweet soy sauce & the chicken, cook until the chicken half done. Remove the chicken from heat, grill the chicken or bake at 180°C in the oven until cooked. Smear with the sauce once in awhile. Serve chicken with the rest of sauce, warm rice & vegetables.
