Empal Gentong Cirebon (Beef & Offal Stew ala Cirebon)

Bahan
  • 500 gr Daging & 250 gr Jeroan *, 400 ml Santan cair
  • 1½ lt Air, 1 Tomat+4 Daun kucai+2 Daun bawang-iris2
  • 2 Daun Salam, 2 Sereh-geprek, 3 sm Kecap manis
  • 3 Cengkeh, 5 sm Minyak, 1 Kaldu blok
  • Bawang merah & Cabai iris-untuk taburan
Haluskan:
  • 6 Bawang merah, 3 Bawang putih, 2 st Ketumbar
  • 5 Kemiri, 2 cm Kunyit, ½ cm Jahe, 2 st Garam
  • 1 st Lada, ½ st Pala bubuk

Cara membuat
  • Rebus daging & jeroan secara terpisah & utuh sampai empuk. Tiriskan, potong kecil2 & tipis. Simpan 800 ml dari kaldu rebusan dagingnya saja.
  • Tumis bumbu halus hingga harum, beri salam, cengkeh & sereh. Angkat & masukkan tumisan ke dalam panci kaldu daging, tuangi santan. Didihkan sambil sesekali diaduk.
  • Kecilkan api, masukkan kaldu blok, kecap, potongan daging & jeroan. Masak hingga bumbu meresap. Beri daun bawang, kucai & tomat, aduk. Angkat, taburi dengan bawang goreng & cabai.
  • Hidangkan dengan lontong (resep: klik di link untuk resepnya) atau nasi hangat.
  • * Bila tidak suka jeroan, gunakan 750 gr daging saja..seperti saya…J

Ingredients
  • 500 gr Beef & 250 gr Cow offal *, 400 ml Coconut milk
  • 1 Tomato+2 Green onions+4 Garlic chives leaves-sliced
  • 3 Cloves, 2 Lemongrass-bruised, 1½ lt Water, 5 tbsp Oil
  • 3 tbsp sweet Soya sauce, 2 Bay leaves, 1 Broth cube
  • Fried Shallots & sliced Chilies-for sprinkle
Grind into a paste:
  • 6 Shallots, 3 Garlic cloves, 2 tsp Salt, 2 cm Turmeric
  • 2 tsp Coriander, 5 Candlenuts, ½ tsp ground Nutmeg
  • 1 tsp Pepper, ½ cm Ginger

Directions
  • Boil the meat & offal separately until they are tender without slicing it first. Drain & sliced them small & thin. Save 800 ml of the beef broth (not the offal).
  • Sauté spices paste until fragrant; add in bay leaves, cloves & lemongrass. Remove from heat & add sautéed spices into the beef broth. Pour in coconut milk; bring to a simmer, stir occasionally.
  • Reduce the heat to low; put in broth cube, soy sauce, beef & offal. Cook until the flavor blended. Add in green onions, garlic-chives leaves & tomato; stir. Remove from the heat, sprinkle with fried shallots & sliced chilies.
  • Serve with Rolled & compressed rice cake (click on the link for the recipe) or with warm steamed rice.
  • * If you don’t like the Offal, just make it with 750 gr beef…like what I did..:)
