Empal Gentong Cirebon (Beef & Offal Stew ala Cirebon)


In Indonesian & English


Bahan
-  500 gr Daging & 250 gr Jeroan *               -  Bawang merah & Cabai iristaburan
-  1500 ml Air, 400 ml Santan cair                Haluskan:
-  2 Sereh-geprek, 3 sm Kcp mns                   -  6 Baw.mrh, 3 Baw.pth, ½ cm Jahe
-  3 Cengkeh, 5 sm Minyak, 1 Tomat-ptg2   -  5 Kemiri, 2 cm Kunyit, 2 st Ketumbar
-  4 Daun Kucai & 2 Daun bawang-ptg2         -  1 st Lada, ½ st Pala, 2 st Garam
-  2 Daun Salam, 1 Kaldu blok

Cara membuat
-   Rebus daging & jeroan secara terpisah & utuh sampai empuk. Tiriskan, potong kecil2 & tipis. Simpan 800 ml kaldu dari rebusan daging saja.
-   Tumis bumbu hls hingga harum, beri salam, cengkeh & sereh. Angkat & mskkan tumisan ke dlm panci kaldu daging, tuangi santan. Didihkan sambil sesekali diaduk.
-   Kclkan api, mskkan kaldu blok, kecap, potongan daging & jeroan. Masak hingga bumbu meresap. Beri daun baw., kucai & tomat, aduk. Angkat, taburi bawang grng & cabai. Hidangkan dengan lontong (resep: click di link) atau nasi hangat.
* Bila tidak suka jeroan, gunakan 750 gr daging saja..seperti saya…J

Ingredients
-  500 gr Beef & 250 gr Cow offal *                  -  Fried Shallots & sliced Chiliessprinkle
-  1½ lt Water, 4 Garlic-chives leaves-cut        Grind into a paste:
-  2 Green onions-cut, 400 ml Coconut milk      -  6 Shallots, 3 cloves Garlic, 2 tsp Salt
-  3 Coves, 5 tbsp Fry.oil, 1 Tomato-cut          -  5 Candlenuts, 2 cm Turmeric
-  2 Lemongrass-bruised, 1 Broth cube              -  1 tsp Pepper, ½ tsp Nutmeg
-  3 tbsp sweet Soya sauce, 2 Bay leaves          -  2 tsp Coriander, ½ cm Ginger

Directions
-   Boil the meat & offal separately until they are tender without slicing it first. Drain & sliced them small & thin. Save 800 ml broth from the meat only.
-   Sauté ground spices until fragrant; add in bay leaves, cloves & lemongrass. Remove from heat & put sautéed spices into the beef broth. Pour in coconut milk; bring to a simmer, stir occasionally.
-   Reduce the heat to low; put in broth cube, soy sauce, beef & offal. Cook until the falvor blended. Add in green onions, garlic-chives leaves & tomato; stir. Remove from the heat, sprinkle with the fried shallots & sliced chilies. Serve with rolled & compressed rice cake (recipe: click on the link) or with warm steamed rice.
* If you don’t like the Offal, just make it with 750 gr beef…like what I did..:)
