Sambal Tauco (Chili Sauce with Soy Beans Paste)


In Indonesian & English

Bahan
-  4 sm Tauco, 75 ml Santan, 2 sm Minyak     -  3 Baw. merah-iris hls, 1 st Air nipis
-  1 Sereh-geprek, 2 Daun salam, 1 sm Gula  -  1 Baw. putih-cincang, Garam (bila perlu)
-  5 Cabai hijau & 3 Cabai rawit-iris hls

Cara membuat
-   Tumis bawang2 & cabai2 hingga harum. Beri sereh, salam, tauco & gula, aduk hingga aroma menyatu.
-   Tuangi santan & air nipis. Masak hingga cairan berkurang & matang (bila krg asin beri garam).

Ingredients
-  4 tbsp Soy beans Paste, 2 tbsp Oil      -  3 Shallots-thinly sliced, 1 tsp Lime juice
-  1 Lemon grass-bruised, 2 Bay leaves    -  1 clove Garlic-minced, Salt (if needed)
-  75 ml Coconut milk, 1 tbsp Sugar         -  5 Green chilies & 3 Bird`s eye chilies-sliced

Directions
-   Sauté shallots, garlic & chilies until fragrant. Add in lemon grass, bay leaves, soy beans paste & sugar. Stir until the flavor blended.
-   Pour in coconut milk & lime juice. Cook until the liquid reduced (add in salt if needed).

Tahu Isi Sayuran Renyah (Crispy Vegetables Stuffed Tofu)

Bahan
-  4 Tahu, Air+Garam+2 Baw.pth hls, Minyak        Bahan Pelapis:
Bahan Isi:                                                                -  10 sm Terigu, 3 sm Tp.beras
-  2 Baw.pth-hlskan, 1 Wortel-ptg hls                   -  1 st Baking pwd, 1 sm Minyak grng
-  ½ B.bombay-cincang, 1 sm Terigu                       -  1 st Ketumbar, 1½ st Garam
-  1 Daun bawang-iris, 2 lbr Kol-iris hls                -  ½ st Lada, 200-250 ml Air es
-  3 sm Ayam cincang, ½ st Gula, 1 Telur              -  2 Dn.jeruk muda-iris kcl, ½ st Gula
-  2 sm Toge, 1 st Garam, 1 st Lada              -  1 st Kunyit bubuk

Cara membuat
-   Tahu dipotong jadi 2 btk persegi kmd masing2 dibelah 2 secara diagonal (btk segitiga). Rendam di campuran air garam & bawang pth hls ± 20 mnt. Tiriskan, goreng di minyak pns hingga kuning kecoklatan kecuali pd sisi yg akan diisi. Angkat & dinginkan. Iris tahu tanpa terputus di bagian tengah dari sisi yg tdk digoreng hingga kuning. Kerok bag. dlm tahu dng sendok kcl (btk kantung)
-   Isi: Tumis bombay & baw.pth. Mskkan ayam cincang, aduk hingga matang. Beri sayuran & bumbu2, aduk2 hingga layu. Beri terigu, aduk rata. Angkat & biarkan dingin. Beri telur, aduk rata.
-   Pelapis: Campur semua bhn (kec. dn. jrk) sampai rata & halus. Beri daun jrk iris, aduk.
-   Masukkan adonan isi pada kantung2 tahu dng sendok kcl, tekan ke bagian tengah agar isi padat & tidak keluar saat digoreng. Lumuri tahu dng bahan pelapis hingga tertutup rata. Pnskan minyak di deep fryer (wajan cekung dng minyak yg banyak) di atas api sedang. Goreng sampai kuning kecoklatan. Angkat, taruh di kertas penyerap minyak.

Ingredients
-  4 Tofus, Water+Salt+2cloves Garlic-grind, Oil      Coating ingredients:
Stuffing ingredients:                                                     -  10 tbsp Flour, 3 tbsp Rice flour
-  2 cloves Garlic-grind, 1 tsp Salt, ½ tsp Sugar       -  1 tsp Baking pwd, ½ tsp Pepper
-  ½ Onion-chopped, 1 Carrot-shredded, 1 Egg          -  1½ tsp Salt, 1 tsp Coriander pwd
-  1 Green onion-sliced, 2 tbsp Bean sprout                -  200-250 ml iced Water, ½ tsp Sugar
-  2 sheets Cabbage-thinly sliced, 1 tbsp Flour          -  2 Kaffir lime leaves-thinly sliced
-  3 tbsp ground Chicken, 1 tsp Pepper                        -  1 tbsp frying Oil, 1 tsp Turmeric pwd

Directions
-   Cut each piece of Tofu into 2 squares; cut each square diagonally into 2 triangles. Soak tofu in the water+salt+garlic mixture for ~ 20 min. Drain & then pan-fry the tofus in hot oil until golden browned on all sides except on 1 side for stuffing. Remove from the pan & let it cool. Cut a slit into the unbrowned side of the tofu. Scoop out the center of the tofu with a teaspoon (make a pocket). Being careful not to break the Tofu.
-   Stuffing: Sauté the onion & garlic with a little frying oil. Put in the chicken, stir until cooked. Add in the vegetables & seasoning; cook until the vegetables wilted. Stir in the flour to combine. Remove from the heat & let it cool down. Add in the egg & stir them well.
-   Coating: Combine all coating ingredients (except the lime leaves), mix until smooth. Stir in the lime leaves.
-   Use a teaspoon to fill tofus pocket with the stuffing, press the stuffing down gently. Dip tofu in the coating to cover all. Preheat the oil in a deep fryer over medium heat. Fry the tofu in hot frying oil a few at a time until golden brown. Take the tofu out & drain them on a paper towels.

Tempe Goreng Tepung (Flour Coating Fried Tempeh)

Bahan
10 iris Tempe, 100 ml Air, Minyak goreng       -  ½ st Baw.pth bbk, 2 Baw.pth-hlskan
5 sm Terigu, 3 sm Tepung beras, ½ st Lada    -  100 ml Air es, 2 Cabai-iris (opsional)
½ st Baking pwd, 1½ st Ketumbar bbk               -  2-3 Daun jrk muda-iris hls
2 st Garam, ½ st Gula, 1 Daun baw-iris

Cara membuat
-   Campur air, baw.pth hls, 1 st garam, 1 st ketumbar. Rendam tempe di dlmnya ± 20 mnt. Tiriskan.
-   Campur tepung2, bak.pwd, ½ st ketumbar, 1 st garam, gula, lada. Tuangi 1 sm minyak goreng & air es sedikit2 sambil diaduk sampai hls. Beri dn baw, dn jrk & cabai, aduk.
-   Panaskan minyak yg banyak di atas api sedang. Masukkan tempe ke adonan tepung hingga tertutup rata. Goreng tempe hingga kuning kecoklatan.

Ingredients
10 sliced Tempeh, 100 ml Water, Frying oil   -  1 Green onion-sliced, ½ tsp Sugar
5 tbsp Flour, 3 tbsp Rice flour, 2 tsp Salt     -  ½ tsp Garlic pwd, 100 ml cold Water
½ tsp Baking pwd, 1½ tsp ground Coriander      -  2-3 Kaffir lime leaves-thinly sliced
½ tsp Pepper, 2 Chilies-sliced (optional)            -  2 cloves Garlic-grind

Directions
-   Blend water, ground garlic, 1 tsp salt, 1 tsp coriander. Soak tempeh in the mixture for ± 20 mins. Drain the tempeh.
-   Mix flours, baking powder, ½ tsp coriander, 1 tsp salt, sugar & pepper. Pour in 1 tbsp of frying oil & cold water a little at a time; stir until the mixture smooth with no lumps. Add in green onion, lime leaves & chilies, mix well.
-   Heat a lot of frying oil over medium heat. Dip the tempeh in batter until it cover all & then fry the tempeh in hot frying oil until golden brown.

Soup Iga Sapi (Beef Ribs Soup)

Bahan
-  1 kg Iga sapi dng daging tbl-ptg2    -  1 Tomat, 300 gr Wortel, 250 gr Kentang-ptg2
-  2 Star anis, 2 btg Seledri-ikat         -  1 st Gula, 1 Sereh-geprek, 2 Daun salam
-  2 Prei-iris, 10 Rawit (optional)         Haluskan:
-  2 sm Air Jrk nipis, 5 Cengkeh          -  4 Bawang putih, 2 cm Jahe , 1½ st Pala
-  3 btr Kapulaga, Baw. goreng             -  8 Bawang merah, 1 st Lada
-  2 cm Lengkuas-geprek, 1¾ lt Air      -  3 Cabai merah, 1 sm Garam

Cara membuat
-   Rebus kentang. Sisihkan. Taburi iga dng garam & lada, kmd goreng sampai kecoklatan.
-   Tumis bumbu hls. Rebus iga dng bumbu hls, salam, lengkuas, cengkeh, star anis, kapulaga & seledri sampai dagingnya lunak. Buang bumbu2 kasar & seledrinya.
-   Beri air jeruk nipis, rawit & gula. Masak sampai bumbu meresap. Mskkan kentang, prei, tomat & wortel, masak lagi sebentar. Taburi bawang goreng.

Ingredients
- 1 kg Beef short ribs/cut5 Cloves        - 300 gr Carrot & 250 gr Potatoes-cut
- stalk Celery-bundled, 2 Star anise     - 2 Bay Leaves, 1¾ lt Water
- 10 Bird`s eye chilies (optional)               - 1 Lemon grass-bruised
- 2 tbsp Lime juice, 2 Leeks-sliced          Grind into a paste:
- 3 Cardamoms, deep fried Shallots          - 8 Shallots, 1 tsp Pepper, 1½ tsp Nutmeg
- 2 cm Galangal-crushed                             - 3 Red chilies, 1 tbsp Salt
- 1 tsp Sugar, 1 Tomato-cut                     - 4 cloves Garlic, 2 cm Ginger

Directions
-   Boil potatoes until it cooked, drain & set aside. Sprinkle the ribs with salt & pepper; then fry in hot oil until lightly browned. Set aside.
-   Sauté the spices paste. Boil ribs with sautéed spices, bay leaves, galangal, cloves, star anise, cardamoms & celery until the meat tender. Discard dried spices & celery stalk.
-   Pour in lime juice, sugar & add chilies. Cook until the flavor blended. Add in potatoes, leeks, tomato & carrots. Cook for awhile. Sprinkle with deep fried shallots before serving.

Kalio Daging Padang (Padang Style Spicy Beef Curry)

Bahan
-  500 gr Daging sapi-ptg2, 400 ml Santan  Haluskan:
-  100 ml Air kelapa, 3 Daun jeruk                 -  8 Baw.merah, 4 Baw.putih, 5 Kemiri
-  3 Daun salam, 1 mata Asam, Minyak         -  2 st Ketumbar, 1 st Jintan, 2 st Gula
-  3 cm Lengkuas & 1 Sereh-geprek                -  10 Cabai mrh, 2 cm Jahe, 1 sm Garam
-  100 gr Kacang mrh-rebus ¾ empuk             -  2 cm Kunyit, 5 Cabai keriting, 1 Tomat

Cara membuat
-   Tumis bumbu hls dng minyak hingga harum. Mskkan daging, aduk sampai berubah warna.
-   Tuangi santan & air kelapa, beri lengkuas, sereh, asam, daun jeruk & salam. Masak hingga santan berminyak. Mskkan kacang mrh, masak hingga santan mengental & kacang empuk.

Ingredients
-  500 gr Beef-sliced, 400 ml Coconut milk     Grin into a paste:
-  100 ml Coconut juice, 3 Kaffir lime leaves   -   8 Shallots, 4 cloves Garlic, 5 Candlenuts
-  3 Bay leaves, 1 Tamarind, Frying oil              -  2 tsp Coriander, 1 tsp Cumin, 2 tsp Sugar
-  3 cm Galangal & 1 Lemon grass-bruised        -  2 cm Turmeric, 2 cm Ginger, 1 tbsp Salt
-  100 gr Kidney beans-boiled ¾ soft                 -  10 red Chilie, 5 Cayenne peppers, 1 Tomato

Directions
-   Sauté ground spices with a bit oil until fragrant. Stir in the beef; cook until the colour changed.
-   Pour the coconut milk & juice; add in galangal, lemon grass, tamarind, lime leaves & bay leaves. Cook until the gravy becomes oily. Put in beans; cook until the gravy becomes rather thick & the beans soft.

Ayam Bakar Padang (Minangese Grilled Chicken)

8 Baw.mrh, ½ st Adas mns, 6 Cabai mrh      -  1 Ayam-ptg 8, 10 cm Kayu manis
½ sm Ketumbar, 1 st Jintan, 3 cm Kunyit    -  5 Daun jrk, 500 ml Santan
4 Baw.pth, 2 Asam, 5 Kemiri, 3 cm Jahe    -  6 cm Lengkuas-parut, 3 sm Minyak
½ st Lada, 1 st Gula, 2 st Garam                   -  2 Sereh-geprek, 3 Cengkeh

Cara membuat
-   Tumis bumbu hls, ky mns, cengkeh, daun jrk & sereh hingga harum. Mskkan ayam, aduk & masak hingga ayam ½ matang. Kecilkan api. Tuang santan, masak sambil ayam sesekali ditusuk2 garpu & diaduk hingga kuah mengering & berminyak.
-   Angkat, dinginkan. Lumuri ayam dng bumbu kering merata kmd bakar hingga kekuningan.

Ingredients
Grind into a paste:                                           Other ingredients:
6 Red chilies *, 4 cloves Garlic                  -  1 Chicken-cut into 8, 3 Cloves
8 Shallots, ½ tsp Anise, 3 cm Ginger       -  5 Kaffir lime leaves, 3 tbsp frying Oil
½ tbsp Coriander, 3 cm Turmeric              -  500 ml Coconut milk, 10 cm Cinnamon
½ tsp Pepper, 1 tsp Sugar, 2 Tamarind   -  6 cm Galangal-grated
1 tsp Cumin, 5 Candlenuts, 2 tsp Salt     -  2 Lemongrass-bruised

Directions
-   Sauté spices paste, cinnamon, cloves, lime leaves & lemon grass until fragrant. Stir in chicken chunks until half cooked. Reduce the heat to low. Pour in coconut milk & salt. Pierce the chicken with a fork & stir occasionally until the sauce thickens & greasy.
-   Remove from the heat & let cool. Smear the chicken with the sauce evenly & then grill until nicely golden brown.
* You can use seeded chilies/substitute it with 1 Paprika if you don`t want it to be spicy

Bakso Sapi (Indonesian Beef Meatballs)

Bahan
-  250 gr Daging Sapi, 1 st Bak.powder       -  2 sm Olive oil, 105 gr Tp. Tapioka*
-  2 Putih telur, 100 gr Ayam cincang          -  ½ st Kaldu bubuk, 1 st Lada bubuk
-  ½ st Bak.soda, 2 sm Bawang goreng           -  1½ st Garam, ½ st Pala
-  3 Bawang putih-cincang & goreng              -  Air utk merebus, Air es

Cara membuat
-   Blender semua bahan (kec.air) sampai selembut pasta. Simpan tertutup di kulkas 1 jam.
-   Didihkan air di panci. Basahi tangan, taruh adonan di telapak. Kepalkan & tekan agar adonan klr dari antara jempol & telunjuk. Ptng membulat dng sendok. Celup sendok diair seblm digunakan. Mskkan bakso ke air mendidih, masak hingga mengapung, angkat kmd rendam sebentar dlm air es. Tiriskan bakso. Akan dihasilkan ± 35-37 butir bakso.
-   Bakso dapat disimpan di freezer untuk waktu lama. Rebus kembali bakso sebelum digunakan. Bakso dapat digunakan utk membuat bakso kuah/mie bakso maupun sebagai bahan untuk membuat berbagai hidangan, antara lain (klik pada link untuk melihat resep2nya): 
Nasi Goreng Jawa, Bihun Goreng, Mie Goreng,
I Fu Mie Goreng, Kwetiau Goreng, Kwetiau Siram,
Mie Ayam Bakso & Pangsit, Bakwan Malang,
Soup Bihun Bakso Gelap alaThai, Sop Kimlo Solo,
Cap Cay Goreng.
* Dpt diganti dng Tp Sagu/Maizena. Ukuran sebanyak 1/4-1/3 nya dari berat daging, tergantung dari kekenyalan bakso yg ingin dihasilkan (saya memakai 1/3 nya)

Ingredients
-  250 gr ground Beef, 1 tsp Bak.powder       -  3 cloves Garlic-minced & fried
-  2 Egg whites, 100 gr ground Chicken          -  1 tsp ground Pepper, ½ tsp Baking soda
-  2 tbsp fried Shallots, ½ tsp Broth pwd       -  105 gr Tapioca flour *1½ tsp Salt
-  ½ tsp ground Nutmeg, 2 tbsp Olive oil        -  enough Water & ice water

Directions
-   Grind all ingredients (with the exception of water) in a food processor into smooth paste. Cover & refrigerate it for 1 hour.
-   Boil water in a pot. Rub your hand with little bit water; put a handful of dough in your palm. Squeeze out a small portion of the dough, between index finger & thumb, to make a rounded ball shaped meatballs. Scoop out the balls dough with a watered spoon. Drop the balls into boiling water; boil until the meat balls floated & cooked; remove from water & soak in ice water for a while. Drain them. You`ll get ~ 35-37 meatballs.
-   You could store the beef meatballs in the freezer for quite long. Re-boil the meatballs before using it. You can serve the beef meatballs as meatballs soup/noodle soup or use the meatballs as complement to make other dish such as (click on the following link for the recipes):

* You can substitute it with Sago Flour/Corn starch. Measurement: 1/4-1/3 of the meat weight; it depends on the plasticity of the meatballs you want to produce (I use 1/3).
