Dendeng Batokok (Dried Beef with Green Chili Paste)

Bahan
Bahan Sambal:
  • 12 Cabai hijau, 5 st Air kelapa, 2 st Garam, 6 Rawit
  • 6 Bawang merah & 2 Daun jeruk-iris tipis, 1 st Gula
  • 1 Tomat hijau-iris, ½ st Air limau, 2 sm Minyak kelapa
  • 2 Bawang putih+2 Kemiri+1 cm Kunyit-haluskan
Bahan Daging:
  • 1 kg Daging paha sapi, 2 sm Air nipis, Garam, Air
  • 8 Bawang merah+1 st Lada+1½ sm Ketumbar-haluskan
  • 4 Bawang putih+10 gr Jahe+5 gr Lengkuas-haluskan

Cara membuat
  • Potong2 daging setebal ± 1 cm. Rebus ½ matang saja di air mendidih. Angkat & tiriskan. Pukul2 hingga tipis & melebar. Remas dengan bahan lain, diamkan 1 jam.
  • Panggang daging di di atas bara arang atau di oven dengan api atas 250° C selama 40-45 menit (hingga garing & berwarna cokelat). Dapat juga dengan menggorengnya dengan minyak kelapa.
  • Sambal: Tumbuk kasar cabai2, tomat & bawang merah lalu sisihkan. Tumis bumbu yang dihaluskan dengan minyak kelapa di atas api sedang. Masukkan bumbu tumbuk kasar & daun jeruk, masak sebentar. Beri air kelapa, garam & gula, masak hingga rasa menyatu. Angkat, beri air limau, aduk rata.
  • Campurkan sambal dengan daging sebelum dihidangkan.

Ingredients
Chili paste:
  • 1 tsp Sugar, 6 Bird`s eye chilies, 2 tsp Salt, 5 tsp Coconut juice
  • 1 Green tomato-sliced, ½ tsp Kaffir lime juice, 2 tbsp Coconut oil
  • 6 Shallots & 2 Kaffir lime leaves-thinly sliced, 12 Green chilies
  • 2 Garlic cloves+1 cm Turmeric+2 Candlenuts-grind
Meat ingredients:
  • 1 kg Top side beef, 2 tbsp Lime juice, enough Salt & Water
  • 8 Shallots+4 Garlic cloves+1½ tbsp Coriander-grind
  • 1 tsp Pepper+5 gr Galangal+10 gr Ginger-grind

Directions
  • Slice beef lengthwise, into ~ 1 cm thick; then cook until ½ done in boiling water. Remove & drain the meat. Pound sliced beef lightly until it's thinner & rather wide. Squeeze the beef with other meat ingredients; let it stand for 1 hour.
  • Roast beef in a charcoal grill or in the oven 250° C over upper heat for 40-45 min (until it becomes brown & dries). You could also fry sliced beef with coconut oil.
  • Chili Paste: Coarsely pound chilies, tomato & shallots; set it aside. Sauté ground spiced with coconut oil over medium heat. Put in chilie mixture & lime leaves; fry for awhile. Put in coconut juice, salt & sugar. Cook until the flavor blended & then remove from the heat. Stir in kaffir lime juice.
  • Mix the beef & chili paste before serving.
