Sayur Melinjo Kacang Panjang (Padi Oats & Long Beans Stew)

Bahan
250 gr Melinjo, 100 gr Kacang panjang               Haluskan:
10 Petai-belah, 200 gr Ayam-ptg2, Garam        -  2 cm Kencur, 2 Cabai merah
1 Sereh & 2 cm Lengkuas-geprek, Minyak          -  4 Bawang merah, 2 Bawang putih
400 ml Santan, 200 ml Air, 1 sm Gula jawa      -  3 Kemiri, 3 Cabai keriting
3 Dn jeruk, 2 Dn salam, 2 Cabai merah-iris

Cara membuat
-   Tumis bumbu halus hingga harum. Masukkan santan, air, melinjo, petai, gula jawa, lengkuas, cabai iris, sereh, daun jeruk & salam. Masak hingga melinjo empuk/matang, aduk sesekali.
-   Beri ayam, kacang panjang & garam. Masak hingga ayam matang & bumbu meresap.

Ingredients
250 gr Padi oats, 400 ml Coconut milk                -  200 ml Water, 1 tbsp Palm sugar
10 Stinky beans-halved, 100 gr Long beans       Grind into a paste:
3 Kaffir lime leaves, 2 Red chilies-sliced            -  3 Candlenuts, 2 cloves Garlic
200 gr Chicken meat-cut, 2 Bay leaves, Oil       -  3 Cayenne pepper, 2 Red chilies
1 Lemongrass & 2 cm Galangal-bruised, Salt      -  4 Shallots, 2 cm Lesser galangal

Directions
-   Sauté the spices paste until fragrant. Put in the coconut milk, water, padi oats, stinky beans, palm sugar, galangal, sliced chilies, lemongrass, kaffir lime leaves & bay leaves. Cook until the padi oats softened; stir occasionally.
-   Add in the chicken, long beans & salt. Cook until the chicken is cooked & the flavor blended.
