Kwetiau Goreng (Fried Kway Teow)

Bahan
  • 350 gr Kwetiau-seduh air panas lalu tiriskan
  • 4 sm Minyak wijen, 3 Telur-kocok, 1 st Lada
  • Bakso Sapi & 200 gr Daging ayam-potong2
  • 3 lembar Kol-potong2, 4 Cabai keriting-iris
  • 1 st Garam, 2 st Cabai bubuk (opsional)
  • 4 Bawang putih & 3 Bawang merah-Haluskan
  • 2 Pakchoy-iris100 gr Toge-seduh air panas
  • 2 Daun bawang-iris, 2 sm Minyak
Campuran Saus:
  • 1 sm Kecap ikan, 2 sm Kecap asin
  • 2 sm Saus tiram4 sm Kecap manis
  • 1 sm Angciu/Arak masak (opsional)

Cara membuat
  • Aduk kwetiau dengan minyak wijen, sisihkan. Tumis bumbu halus, garam & lada dengan minyak hingga harum. Beri ayam & bakso, masak hingga ayam matang. Masukkan kwetiau, cabai & campuran saus lalu aduk rata.
  • Tuangkan telur, aduk rata hingga matang. Beri sayuran, masak hingga sayuran layu.

Ingredients
  • 350 gr Wide rice noodles, 3 Eggs-beaten, 1 tsp Salt
  • 4 tbsp Sesame oil, 100 gr Bean sprout-blanched
  • Beef Meatballs & 200 gr Chicken-sliced1 tsp Pepper
  • 3 sheets Cabbage, 2 Bok choy Scallions-sliced
  • 4 Cayenne peppers-sliced, 2 tsp Chili powder (optional)
  • 4 Garlic cloves & 3 Shallots-grind, 2 tbsp frying Oil
Sauce mixture:
  • tbsp Fish sauce2 tbsp Oyster sauce
  • tbsp sweet Soy sauce, tbsp Soy sauce
  • tbsp Chinese rice wine (optional)

Directions
  • Soak noodles in hot water for 10 minutes. Drain & then mix it with sesame oil. Set it aside. Sauté ground spices, salt, pepper with until fragrant. Add in chicken & meatballs. Cook until the chicken color has changed & then put in noodles, chilies & sauce mixture. Toss to combine it well.
