Pesmol Telur Goreng (Fried Eggs with Pickled Vegetables)

Bahan
  • 4 Telur-rebus, 2 Daun salam, 2 Daun jeruk, 125 ml Air
  • 3 Cabai-iris, 4 Bawang merah, 1 sm Cuka, 3 st Gula
  • 1 Wortel & 1 Ketimun-ptg korek api, 1 Sereh-geprek
  • Minyak, Garam secukupnya
Haluskan:
  • 4 Bawang merah, 2 Bawang putih, 2 cm Kunyit, 5 Kemiri

Cara membuat
  • Panaskan minyak, cukup banyak utk merendam min. ½ tinggi telur hingga panas tinggi. Goreng telur dlm minyak panas hingga berkerak kecokelatan. Angkat, tiriskan lalu sisihkan.
  • Tumis bumbu hls, sereh, salam, daun jrk. Tuangi air, didihkan. Mskkan cabai, wortel, ketimun, bawang merah & telur, aduk. Beri cuka, gula & garam secukupnya. Masak hingga bumbu meresap.

Ingredients
  • 4 Eggs-boiled, 2 Bay leaves, 4 Shallots, 125 ml Water
  • 3 Chilies-sliced, 1 tbsp Vinegar, 1 Lemongrass-bruised
  • 1 Carrot & 1 Cucumber-shredded, 2 Kaffir lime leaves
  • 3 tsp Sugar, frying Oilenough Salt
Grind into a paste:
  • 2 Garlic cloves4 Shallots, 5 Candlenuts, 2 cm Turmeric

Directions
  • Preheat oil, enough to cover at least half of the eggs until really hot. Fry the eggs until the surface becomes crusty & golden brown. Remove from the heat; drain & set it aside.
  • Sauté the spices paste, lemongrass, bay leaves & lime leaves. Pour in water; bring it to a simmer. Stir in chilies, carrot, cucumber, shallots & fried eggs. Add in vinegar, sugar & enough salt. Cook until the flavor blended.
