Tahu Isi Sayuran Renyah (Crispy Vegetables Stuffed Tofu)

Bahan
  • 4 Tahu ukuran besar, 2 Bawang putih-haluskanMinyak
  • Air & Garam secukupnya
Bahan Isi:
  • 2 Bawang putih-haluskan, 1 Wortel-serut halus, 1 Telur
  • 3 sm Ayam cincang, ½ Bawang bombay-cincang, 1 st Lada
  • 2 sm Toge, 1 Daun bawang-iris, 2 Daun Kol-iris halus
  • ½ st Gula, 1 st Garam, 1 sm Terigu
Bahan Pelapis:
  • 10 sm Terigu, 3 sm Tepung beras, 1 st Baking powder
  • ½ st Lada, 200-250 ml Air es, 1 sm Minyak goreng
  • 1 st Ketumbar, 1½ st Garam, 1 st Kunyit bubuk
  • 2 Daun jeruk-iris halus, ½ st Gula

Cara membuat
  • Tahu dipotong jadi 2 btk persegi lalu masing2 dibelah 2 secara diagonal (bentuk segitiga). Rendam di campuran air, garam & bawang putih halus selama 20 menit. Tiriskan, goreng di minyak panas hingga kuning kecokelatan & berkulit, kecuali pada sisi yang akan diisi. Angkat & dinginkan. Iris tahu tanpa terputus di bagian tengah dari sisi yangg tidak digoreng hingga kuning. Kerok bagian dalam tahu di sisi tersebut dengan sendok kecil (btk kantung)
  • Isi: Tumis bombay & bawang putih. Masukkan ayam cincang, aduk hingga matang. Beri sayuran & bumbu2, aduk2 hingga agak layu. Beri terigu, aduk rata. Angkat & biarkan dingin. Beri telur, aduk rata.
  • Pelapis: Campur semua bahan (kecuali daun jeruk) sampai rata & halus. Beri daun jeruk iris lalu aduk.
  • Masukkan adonan isi pada kantung2 tahu dengan sendok kecil, tekan ke bagian tengah agar isi padat & tidak keluar saat digoreng. Lumuri tahu dengan bahan pelapis hingga tertutup rata. Panaskan minyak di deep fryer (wajan cekung dengan minyak yang banyak) di atas api sedang. Goreng sampai kuning kecokelatan. Angkat, taruh di kertas penyerap minyak.

Ingredients
  • 4 firm Tofu, 2 Garlic cloves-grind, enough Water, Salt & Oil
Stuffing ingredients:
  • 2 Garlic cloves-grind, 1 tsp Salt, ½ tsp Sugar, 1 tbsp Flour
  • ½ Onion-chopped, 1 Carrot-shredded, 1 tsp Pepper, 1 Egg
  • 2 sheets Cabbage-thinly sliced, 3 tbsp ground Chicken
  • 1 Green onion-sliced, 2 tbsp Bean sprout
Coating ingredients:
  • 10 tbsp Flour, 3 tbsp Rice flour, 1 tsp Coriander powder
  • 200-250 ml iced Water1 tsp Baking powder, 1½ tsp Salt
  • 2 Kaffir lime leaves-thinly sliced1 tsp Turmeric powder
  • ½ tsp Sugar, ½ tsp Pepper, 1 tbsp frying Oil

Directions
  • Cut each piece of Tofu into 2 squares; cut each square diagonally into 2 triangles. Soak tofu in the water+salt+garlic mixture for ~ 20 minutes. Drain & then pan-fry tofu in hot oil until golden brown on all sides except on 1 side for stuffing. Remove from the pan & let it cool down. Cut a slit into the un-browned side of tofu. Scoop out the center of tofu with a teaspoon (make a pocket). Being careful not to break the Tofu.
  • Stuffing: Sauté the onion & garlic with a little frying oil. Put in chicken, stir until it's cooked. Add in vegetables & seasoning; cook until the vegetables are soften. Stir in the flour to combine. Remove from the heat & let it cool down. Add in egg & stir them well.
  • Coating: Combine all coating ingredients (except for the lime leaves), mix until it's smooth with no lumps. Stir in the lime leaves.
  • Use a teaspoon to fill up tofu's pocket with the stuffing, press the stuffing down gently. Dip tofu in the coating to cover all. Preheat oil in a deep fryer over medium heat. Fry tofu in hot frying oil a few at a time until golden brown. Take the tofu out & drain them on a paper towels.
