Ayam Goreng Bumbu Sambal Leunca (Fried Chicken in Black Nightshade Chili Paste)

Bahan
  • 500 gr Fillet ayam-potong2, Garam, Minyak goreng
  • 1 Jeruk limau, 1 Daun bawang-iris, ¼ Jeruk nipis
  • segenggam Daun kemangi
Haluskan:
  • 1 st Ketumbar, 1 cm Kunyit, 2 Bawang putih
  • 1 st Lada, 1 Sereh (putihnya saja), Garam
Bahan Sambal:
  • 60 gr Leunca, 2 Daun jeruk, 3 st Garam
Haluskan utk sambal:
  • ½ st Terasi, 10 Cabai merah, 4 Cabai keriting
  • 15 gr Gula merah, 2 Bawang putih, 2 Kemiri
  • 6 Bawang merah

Cara membuat
  • Ayam: Remas2 ayam dng bumbu hls, garam & air jrk nipis. Diamkan 20 mnt. Goreng hingga kekuningan.
  • Sambal: Tumis bumbu sambal hls & daun jrk sampai harum. Mskkan garam & leunca, aduk & masak hingga sambal matang.
  • Mskkan ayam, campur dng sambal. Beri daun bawang & kemangi lalu kucuri air jrk limau. Aduk rata, angkat.

Ingredients
  • 500 gr Chicken fillet-sliced, ¼ Lime, frying Oil
  • 1 Kaffir Lime, 1 Green onion-slicedSalt
  • a handful of Lemon basil/Basil leaves
Grind into a past-for chicken:
  • 1 Lemon grass (white part only), 1 tsp Pepper
  • 1 tsp Coriander, 1 cm Turmeric, 2 Garlic cloves
  • enough Salt
Chili Paste ingredients:
  • 60 gr Black nightshade, 2 Kaffir lime leaves
  • 3 tsp Salt
Grind into a paste-for Chili paste:
  • 6 Shallots, 2 Galic cloves, 15 gr Brown sugar
  • 10 Red chilies, 4 Cayenne peppers
  • ½ tsp Shrimp paste, 2 Candlenuts

Directions
  • Chicken: Mix & squeeze the chicken with spices paste, salt & lime juice. Let it stand for 20 minutes. Fry the chicken until golden brown.
  • Chili paste: Sauté the spices paste & kaffir lime leaves until fragrant. Add in salt & black nightshade; stir until the chili paste cooked.
  • Put in the chicken; combine it with the chili paste well. Stir in green onion, lemon basil/basil leaves & kaffir lime juice.
