Dutch Frikandellen (Dutch Minced-Meat Hot Dog)

Bahan
  • 350 gr Daging sapi, 350 gr Daging babi*1 st Lada hitam bubuk
  • 200 gr Daging ayam, 2 Telur-kocok, 2½ st Garam, 150 ml Krim
  • 2 Bawang putih & ¼ Bawang bombay-iris & goreng, MinyakAir
  • 4 sm Panir, 1 st Pala bubuk, ½ sm Mustard, ½ sm Kecap manis
  • ½ st Ketumbar bubuk, ½ st Jintan bubuk, ½ st Kaldu bubuk
  • 2 sm Peterseli, ½ st Gula
Saus Curry:
  • 80 gr Bawang bombay-cincang, 3 st Tomat pasta, 1 st Garam
  • ¼ st Cabai bubuk, 1¼ st Bumbu kari bubuk, 1 st Paprika bubuk
  • 25 gr Mentega150 ml Air, 1 st Gula

Cara membuat
  • Pilih semua daging dng kadar lemak minimun 20%. Giling sangat halus, daging2 & bawang goreng dng food processor. Di wadah besar, uleni daging giling dng semua bumbu, peterseli, panir, telur & krim hingga menyatu. Mskkan kulkas 1 jam.
  • Siapkan beberapa lembar kertas perkamen (baking paper). Taruh 3 sm adonan di kertas tsb, ± 6 cm dari salah 1 tepi kertas. Bentuk adonan menjadi spt sosis dng diameter ± 5 cm, panjang 20-22 cm, serapi mungkin dng tangan. Gulung kertas & perlahan tekan merata utk memadatkan & membentuk sosis dengan lebih baik. Ikat ujung gulungan dng benang katun (cara lain: gunting ujung piping bag sekali pakai agar lubangnya menjadi sebesar ukuran diameter frikandel. Mskkan adonan ke piping bag & peras keluar, langsung di atas air mendidih. Potong tiap 20-22 cm).
  • Didihkan air di panci. Masukkan bungkusan frikandel ke air mendidih, rebus 6-8 menit dng api sedang. Angkat frikandel dari panci, buang kertas pembungkus & keringkan di atas rak. Anda dpt membekukan frikandel utk digunakan lain kali atau langsung digoreng
  • Panaskan minyak yg banyak 190° C, goreng frikandellen di minyak sampai terendam selama 3-4 menit (sampai cokelat). Atau dapat juga dengan memanggangnya di oven 175° C selama ± 10 menit.
  • Saus Curry: Tumis bawang bombay dng mentega sampai layu. Mskkan kari bubuk, paprika & cabai bubuk, aduk 1 menit. Beri tomat pasta, garam, gula & air. Masak sampai mengental.
  • Penyajian: Anda dpt menghidangkan Frikandel dng kentang goreng, mayonnaise & saus curry maupun saus tomat. Atau anda dpt membuat Frikandel speciaal. Cara membuat: seblm frikandel digoreng/panggang, iris bagian tengah frikandel memanjang seperti hotdog. Ltkkan baw.bombay cincang mentah, mayonnaise & saus curry/saus tomat di belahan tengah tsb.
  • * Bagi Muslim/yang tidak suka daging babi, ganti daging babi dng menambah jumlah daging & lemak ayam

Ingredients
  • 200 gr Chicken, 350 gr Beef, 350 gr Pork, ½ tsp Broth powder
  • 2 cloves Garlic & ¼ Onion-sliced & fried, 1 tsp ground Nutmeg
  • 2 Egg-beaten½ tsp ground Cumin1 tsp ground Black pepper
  • 4 tbsp Bread crumbs, 150 ml Cream, ½ tsp Sugarfrying Oil
  • 2 tbsp chopped Parsley, ½ tbsp sweet Soy sauce2½ tsp Salt
  • ½ tsp ground Coriander, ½ tbsp Mustard, enough Water
Curry ketchup:
  • ¼ tsp Cayenne pepper powder, 80 gr Onion-minced, 1 tsp Salt
  • 1¼ tsp Curry powder, 1 tsp Paprika powder, 25 gr Butter
  • 1 tsp Sugar, 3 tsp Tomato paste, 150 ml Water

Directions
  • Choose all meat with a minimum of 20% fat. Grind all meat & fried garlic-onion very fine with a food processor. In a large bowl, knead ground meat with all spices, parsley, bread crumbs, eggs & cream thoroughly. Refrigerate for 1 hour.
  • Prepare several sheets of baking paper. Put 3 tbsp of the mixture into each baking sheets, ~ 6 cm from one edge of the paper. Using both hands, form them into 20-22 cm long, 5 cm in diameter sausage as neat as possible. Gently roll up & press evenly the baking sheet to compact & form the sausage. Secure end of the baking sheets with cotton thread (another way: Cut a disposable piping bag tip to make an opening as big as the diameter of a frikandel. Fill up the mixture into the piping bag. Using both hands, squeeze them out from the piping bag, right into a pot of boiling water, cut every 20-22 cm).
  • Boil water in a large pot. Put wrapped frikandellen into boiling water; boil for 6-8 minutes over medium heat. Remove the frikandellen from the pot. Discard the paper & dry them on cooling rack. You can either freeze them for later use, or deep fry them now.
  • Heat the oil to 190° C & then deep fry the frikandellen in hot oil for 3-4 minutes (until golden brown). Or you can also bake it in the oven: Preheat oven to 175° C; bake frikandellen for ~ 10 minutes.
  • Curry ketchup: Sauté minced onion with butter until translucent. Add in curry powder, paprika & cayenne pepper; stir for ~ 1 min. Put in tomato paste, salt, sugar & water. Simmer until the sauce thickens.
  • Serving: You could serve the Frikandel with French fries, mayonnaise, curry or regular ketchup. Or you can also make Frikandel speciaal. To make this, before you fry or bake the Frikandel, cut it lengthwise through the middle (like a hotdog). Put chopped raw onion, mayonnaise & curry/regular ketchup in the middle of the frikandel.
  • * For a Halal version/someone who can't eating pork, substitute the pork portion with chicken flesh & fat.
