Spaetzle Casserole with Cheese (Spätzleauflauf mit Käse)

Spätzle (Spaetzle) is a type of egg noodle of soft texture found in the cuisine of Germany.

Bahan
  • 150 gr Daging asap-iris, 3 sm Terigu, 2-3 sm Panir
  • 200 gr Daging cincang, 1 st Lada bubuk, 1 st Gula
  • 2 Daun salam200 ml Krim, 2 sm Keju Mascarpone
  • 2 Bawang merah-cincang, 1 Bawang putih-haluskan
  • 1 st Kaldu sapi bubuk, 2 st Garam, 2½ sm Mentega
  • 50 gr Keju Cheddar parut, 2 Telur, 2 sm Olive oil
  • 1 st Mustard pasta, 1 st Pala bubuk, 150 ml Susu
  • 2 sm Tomat pasta, 2 sm Mix herbs
Bahan Spätzle: 500 gr Spätzle telur*
  • 400 gr Terigu, 200 ml Air hangat17 gr Mentega
  • 4 Telur, 1 panci Air, Garam

Cara membuat
  • Spätzle: Campur telur, ½ st garam & terigu. Aduk dengan sendok kayu hingga adonan lembut. Tuangi air hangat & aduk sampai konsistensinya tepat (seperti pasta). Bila adonan terlalu cair, tambahkan sedikit terigu. Tutupi & diamkan adonan ± 30 menit. Didihkan air di panci dengan sedikit garam di suhu tinggi. Aduk adonan dulu sebelum dimasak. Letakkan alat press spätzle/alat press kentang di atasnya & tuang 1 porsi adonan setiap kali. Tekan handlenya & potong adonan yang menggantung dengan pisau/spatula. (Jika tidak memiliki alat press: Letakkan sedikit adonan di talenan kayu, miringkan posisi talenan ke arah permukaan panci, dorong sedikit demi sedikit/kikis adonan untuk memasukkannya ke dalam air dengan menggunakan bagian tumpul dari pisau). Setelah ± 30 detik spätzle akan mengapung. Ambil dengan saringan halus & tiriskan. Letakkan di wadah & beri sedikit mentega, campur rata.
  • Panaskan oven 190°C. Tumis bawang putih, bawang merah, daging asap, daging & daun salam dengan olive oil. Angkat & sisihkan.
  • Cairkan 2 sm mentega, masukkan terigu, aduk cepat, tuang krim & susu sedikit2 sambil aduk cepat. Masukkan 30 gr keju cheddar, mascarpone, tomat pasta, mustard, gula, garam, lada, pala & kaldu bubuk. Masak hingga keju leleh lalu masukkan tumisan daging, aduk rata. Angkat dari api, buang daun salamnya. Masukkan spätzle, telur, mix herbs & sisa keju parut lalu aduk hingga semua tercampur rata.
  • Olesi loyang dengan mentega. Tuang adonan kedalamnya. Panggang adonan ± 20 menit, taburi panir, panggang lagi 10 menit/sampai kecokelatan.
  • * Untuk mempersingkat waktu, anda juda dapat membeli 500 gr spätzle telur siap pakai bila ada yg menjualnya.

Ingredients
  • 150 gr Smoked beef-sliced, 3 tbsp Flour, 1 tsp Sugar
  • 200 gr minced Beef, 2 Bay leaves, 2 Shallots-chopped
  • 50 gr grated Cheddar cheese, 2 Eggs 2 tbsp Olive oil
  • 1 tsp ground Pepper, 1 tsp Mustard paste, 2 tsp Salt
  • 200 ml Cream, 2½ tbsp Butter, 1 Garlic clove-minced
  • 150 ml Milk, 1 tsp ground Nutmeg, 2 tbsp Mix herbs
  • 2 tbsp Mascarpone cheese1 tsp Beef broth powder
  • 2-3 tbsp Breadcrumbs, 2 tbsp Tomato paste
Spätzle ingredients: 500 gr Egg spaetzle*
  • 400 gr Flour, 4 Eggs, Salt, 200 ml warm Water
  • 1 big pot of Water, 17 gr Butter

Directions
  • Spaetzle: Combine eggs & ½ tsp salt with the flour with a wooden spoon until smooth. Add some lukewarm water & stir until the consistency is right (looks like a paste). If you added too much water, balance it out by adding a bit more flour. Cover & let the dough set for ~ 30 minutes. Boil water with a pinch of salt in a big pot over high temperature. Stir the dough before you're cooking it. Place the Spaetzle press over the saucepan & put 1 portion at a time into the press. Press the handle down. Cut off hanging Spaetzle with a knife or a spatula. (If you don`t have spaetzle press: Put bits of dough on a wooden board & scrape it into boiling water, using the back of a knife). After about 30 seconds, the Spaetzle will start to float on the surface. Take them out & drain with a fine strainer. Put them in a dish, add a knob of butter & mix well.
  • Preheat oven to 190°C. Sauté garlic, shallots, smoked beef, beef & bay leaves with olive oil. Remove from the heat & set it aside.
  • Melt 2 tbsp of butter. Add in flour; stir quickly until it smooth. Pour in cream & milk once at a time; stirring it quick. Put in 30 gr cheddar cheese, mascarpone, tomato paste, mustard, sugar, salt, pepper, nutmeg & beef broth. Cook & stir it until the cheese melted. Then mix in sautéed meat. Remove from the heat & discard bay leaves. Add in spaetzle, eggs, mix herbs & remaining cheddar cheese. Keep stirring until it's combining well.
  • Transfer the batter into a greased baking dish. Bake for ~ 20 minutes; sprinkle with breadcrumbs & bake for another 10 minutes (until golden brown).
  • You could also just buy 1-500 gr package of fresh egg spaetzle if you can find it or if you want to cut off the cooking time.
