Ulukutek Leunca (Sautéed Oncom & Black Nightshade)


Oncom is one of the traditional staple foods of West Java (Sundanese) cuisine. There are two kinds of oncom: red oncom and black oncom. Oncom is closely related to tempeh; both are foods fermented using mold. Red oncom reduces the cholesterol levels of rats, suggesting effects in humans. (Wikipedia)

Bahan
  • 250 gr Oncom-bakar & tumbuk kasar, 30 gr Leunca
  • 1 Daun bawang-iris, 1 cm Lengkuas-geprek, Minyak
  • 1 Sereh-iris halus bagian putihnya, 2 Daun salam
  • 75 ml Air, 8 Cabai rawit-iris, 50 gr Daun kemangi
Haluskan:
  • 3 Cabai merah, 6 Bawang merah, 3 Bawang putih
  • 2 cm Kencur, ½ st Gula, 1½ st Garam

Cara membuat
  • Tumis bumbu hls, salam, sereh, lengkuas & cabai iris dng minyak sampai harum & layu.
  • Mskkan oncom & leunca, aduk rata, tuangi air, masak hingga mengering & leunca layu. Beri kemangi, aduk rata kmd angkat.

Ingredients
  • 250 gr Oncom-roasted & then coarsely pound
  • 30 gr Black nightshades, 1 Green onion-sliced
  • 1 Lemongrass-thinly sliced the white part, Frying oil
  • 75 ml Water, 1 cm Galangal-bruised, 2 Bay leaves
  • 8 Bird`s eye chilies-sliced50 gr Lemon basil leaves
Grind into a paste:
  • 3 Red chilies, ½ tsp Sugar, 1½ tsp Salt, 6 Shallots
  • 2 cm Lesser galangal, 3 Garlic cloves

Directions
  • Sauté spices paste, bay leaves, lemongrass, galangal & sliced chilies with a little oil until fragrant & the chilies wilted.
  • Stir in oncom & black nightshades until blended. Pour in water; cook until the liquid absorbed & black nightshades wilted. Put in basil leaves; remove from the heat.
