Nasi Ayam Hainan (Hainanese Chicken Rice)

Bahan
Bahan Nasi Hainan:                  
  • 500 gr Beras, 600 ml Kaldu ayam, 2 sm Minyak
  • ½ Bawang bombay-cincang, ½ st Pala, Garam
  • 2 Cengkeh, 2 sm Minyak wijen, 1 st Lada bubuk
  • 3 Bawang putih-haluskan, 1 cm Jahe parut
  • 1 sm Angciu (optional)
Bahan Kuah:
  • 2 cm Jahe & 2 Bawang putih-haluskan, Minyak
  • 1100 ml Air+3 st Kaldu ayam-aduk rataGaram
  • 2 Daun bawang & 2 Caisim-iris, 2 sm Kecap asin
  • 1 st Lada bubuk
Bahan Ayam:
  • 500 gr Dada/Paha ayam, 1 sm Kecap asin
  • 2 cm Jahe & 1 Bawang putih-haluskan, Garam
  • 1 sm Minyak wijen, 1 st Lada bubuk
Bahan Sambal:
  • 1 Bawang merah & 5 Cabai keriting-iris, Garam
  • 1 Bawang putih-cacah, 2 tetes Cuka, 2 sm Kaldu kuah
Bahan Saus Kecap Jahe:
  • 1 st Jahe parut, 1 Bawang putih-cincang
  • 2 sm Kecap asin+1 st Minyak wijen
 
Cara membuat
  • Ayam: Campur bahan ayam kecuali minyak wijen. Kerat2 ayam lalu lumuri dengan bahan tersebut. Kukus hingga matang. Angkat lalu ulasi dengan minyak wijen.
  • Kuah: Didihkan air kaldu. Sementara itu tumis bawang putih & jahe hingga kekuningan. Angkat & masukkan tumisan ke kaldu. Bumbui dengan lada, garam, kecap asin. Ambil 2 sm kuah tersebut untuk membuat sambal. Sisa kuah diberi daun bawang & caisim. Rebus lagi sebentar saja.
  • Nasi Hainan: Tumis bawang putih, jahe & bombay dengan minyak. Campur tumisan dengan semua bahan nasi (kecuali minyak wijen). Masak di rice cooker sampai matang. Beri minyak wijen, lalu aduk rata.
  • Sambal: Campur semua bahan, tekan2 dengan sendok untuk menyatukan rasa.
  • Saus Kecap Jahe: Campur semua bahan, tekan2 dengan sendok untuk menyatukan rasa.
  • Letakkan nasi di piring saji. Hidangkan dengan ayam, kuah, sambal & sausnya.
 
Ingredients
Rice ingredients:
  • 600 ml Chicken broth, 500 gr Rice, 2 Cloves
  • 1 cm Ginger & 3 Garlic cloves-grind, Salt
  • ½ tsp ground Nutmeg, 1 tsp ground Pepper
  • 2 tbsp Sesame oil, ½ Onion-minced
  • 2 tbsp frying Oil,1 tbsp Rice wine (optional)
Soup ingredients:
  • 1100 ml Water+3 tsp Chicken broth powder-mix
  • 2 cm Ginger & 2 Garlic cloves-grindfrying Oil
  • 2 Green onion & Green mustard cabbage-sliced
  • 1 tsp ground Pepper, 1 tbsp Soy sauce, Salt
Chicken ingredients:
  • 500 gr Chicken breast/thighs, 1 tbsp Soy sauce
  • 2 cm Ginger & 1 Garlic clove-grind, enough Salt
  • 1 tsp ground Pepper, 1 tbsp Sesame oil
Chili relish:
  • 2 drops of Vinegar, 5 Chilies & 1 Shallots-sliced
  • 1 Garlic clove-minced, 2 tbsp Soup broth, Salt
Garlic-Soy sauce ingredients:
  • 1 Garlic clove-minced, 1 tsp grated Ginger
  • 2 tbsp Soy sauce, 1 tsp Sesame oil
 
Directions
  • Chicken: Combine all chicken ingredients with the exception of sesame oil. Make deep slashes on the chicken surface & then rub it with the mixture. Steam until the chicken cooked. Remove from the steamer & brush it with sesame oil.
  • Soup: In a pot, bring broth water to a boil. Meanwhile, sauté the garlic & ginger until golden. Transfer sautéed spices into the broth pot. Season with salt, pepper & soy sauce. Take 2 tbsp of it to mix with the chili relish. Put green onion & green mustard cabbage into the pot & cook again just for awhile.
  • Rice: Sauté garlic, ginger & onion with oil. Combine sautéed ingredients with all of the rice ingredients (with the exception of sesame oil) & then cook it in a rice cooker. Add in sesame oil & combine well.
  • Chili relish: Mix all ingredients, stir & press it with a spoon to combine the flavour.
  • Garlic-soy sauce: Mix all ingredients, stir & press it with a spoon to combine the flavour.
  • Place some rice in serving plates. Serve Hainan rice with the chicken, soup, chili relish & garlic-soy sauce.
