Kwetiau Siram (Kway Teow with Vegetables & Chicken Stew)

Bahan
  • 300 gr Kwetiau-seduh air panas, 1 sm Kecap asin
  • 5 Bakso & 200 gr Daging ayam-iris, 2 Telur-kocok
  • 100 gr Toge, 4 sm Minyak wijen, 1 lt Kaldu ayam
  • 2 Putren+1 Wortel+2 Daun bawang+2 Sawi-iris2 
  • 2 Sosis/Lap chong-iris, Minyak goreng secukupnya
  • 2 sm Maizena+3 sm air-aduk
Haluskan:
  • 2 Bawang putih, 4 Bawang merah, 1 st Garam
  • 2 Cabai merah, 1 cm Jahe, 1 st Lada
Saus kecap:
  • 1 sm Kecap ikan, 2 sm Kecap asin, 2 sm Kecap manis
  • 1 sm Saus tiram1 sm Angciu (opsional)

Cara membuat
  • Tiriskan Kwetiau lalu campur dengan 2 sm minyak wijen & campuran saus kecap. Goreng, lalu sisihkan
  • Tumis bumbu halus dengan 2 sm minyak wijen. Masukkan sedikit minyak, ayam, bakso, sosis & putren lalu goreng hingga matang. Masukkan sayuran, aduk sebentar. Beri kaldu & kecap asin lalu didihkan. Masukkan telur, aduk2. Beri larutan maizena, masak sampai mengental
  • Letakkan kwetiau di piring saji, sirami dengan kuahnya.

Ingredients
  • 300 gr Wide rice noodles, 1 tbsp Soy saucefrying Oil
  • 200 gr Chicken fillet & 5 Meatballs-sliced, 1 lt Broth
  • 2 Sausages/Chinese Sausage-sliced, 4 tbsp Sesame oil
  • Green mustard cabbage-sliced100 gr Bean sprout
  • 2 tbsp Cornstarch+3 tbsp Water-mix, Eggs-beaten
  • Baby corn+2 Green onions+1 Carrot-sliced
Grind into a paste:
  • 1 cm Ginger2 Garlic cloves, 4 Shallots, 1 tsp Salt
  • tsp PepperRed chilies
Sauce mixture:
  • tbsp Oyster sauce, tbsp Fish sauce
  • tbsp sweet Soy sauce, 2 tbsp Soy sauce
  • tbsp Chinese rice wine (optional)

Directions
  • Soak wide noodle in hot water for 10 minutes. Drain & then mix it with 2 tbsp of sesame oil & sauce mixture. Fry until it's cooked & then set it aside.
  • Sauté spices paste with 2 tbsp sesame oil. Put in a bit of frying oil, chicken, meatballs, sausages & baby corn. Fry until all are cooked & then toss in vegetables. Pour in the broth & soy sauce. Bring it to a simmer. Whisk in eggs. Pour in corn starch mixture, cook until the broth rather thick.
  • Put fried kway teow in serving plates, pour the soup over.
