Telur Goreng Bumbu Kecap (Fried Eggs in Soya Sauce)

Bahan
  • 8 Telur-rebus & kupas, 200 ml Kaldu, 2 Daun salam
  • ½ Bawang bombay & 2 Cabai-iris, 2 cm Jahe-geprek
  • 1 Jeruk limau/1 st Jeruk nipis5-6 sm Kecap manis
  • 1 Tomat-iris2, Minyak goreng
Haluskan:
  • 2 Bawang merah, 1 Bawang putih, 2 st Ketumbar
  • 2 Kemiri, 1½ st Garam, ½ st Lada

Cara membuat
  • Goreng telur hingga berkerak dng menggunakan minyak panas, angkat & sisihkan.
  • Tumis bumbu hls, jahe, salam, bombay & cabai sampai harum. Beri telur, aduk rata.
  • Beri kecap & kaldu. Masak dng api kcl sambil diaduk hingga kuah mengental & telur kecokelatan. Mskkan tomat, masak hingga layu. Angkat, lalu kucuri air limau, aduk rata.

Ingredients
  • 8 Eggs-boiled & peeled, 2 Bay leaves, 1 Tomato-sliced
  • 200 ml Broth, 2 cm Ginger-bruised, 2 Chilies-sliced
  • 5-6 tbsp sweet Soy sauce, ½ Onion-sliced, Frying oil
  • 1 Kaffir lime/1 tsp Lime juice
Grind into a paste:
  • 2 Shallots, ½ tsp Pepper, 2 tsp Coriander, 1½ tsp Salt
  • 2 Candlenuts, 1 Garlic clove

Directions
  • Fry the eggs in hot oil until the surface becomes crusty & golden brown. Set aside.
  • Sauté the spices paste, ginger, bay leaves, onion & chilies until fragrant. Add in the eggs & stir them well.
  • Pour in the broth & soy sauce. Cook over low heat until the sauce becomes rather thick; stir occasionally. Add in the tomato, cook until it wilted. Remove from heat & then stir in the lime juice.
