Sate Udang (Prawn Satay)


In Indonesian & English (the English version is below the recipe written in Indonesian)


Bahan
  • 500 gr Udang besar, 2 st Air jeruk nipis, 6 sm Madu
  • 1 sm Kecap asin, 3 sm Kecap manis, 1 st Jahe parut
  • 1 st Cabai bubuk, 1 st Lada bubuk, ½ st Ketumbar
  • 1 Bawang putih-haluskan, 1 sm Minyak wijen
  • 1 Bawang merah & 1 Cabai keriting-iris halus
  • 1 st Garam, Tusukan sate

Cara membuat
  • Buang kepala udang & belah punggungnya. Campur & aduk rata bahan2 lain. Mskkan udang ke bhn perendam tersebut, diamkan 30 mnt.
  • Tusukkan udang di tusukan sate, bakar hingga matang. Didihkan sisa bahan perendam, hidangkan bersama sate udang. 

Ingredients
  • 500 gr Prawns, 2 tsp Lime juice, 1 tsp Chili flakes
  • 1 tsp ground Pepper, ½ tsp Coriander, 1 tsp Salt
  • 1 Garlic clove-grind, 1 tsp grated Ginger, Skewers
  • 1 Shallot & 1 Cayenne pepper-sliced, 6 tbsp Honey
  • 1 tbsp Salty soy sauce, 3 tbsp Sweet soy sauce
  • 1 tbsp Sesame oil

Directions
  • Remove prawns head & cut along back top to tail. Combine other ingredients together. Put in the prawns; let it stand for 30 min.
  • Thread the prawns onto the skewers. Grilled the prawns until all are cooked. Simmer the rest of the marinate sauce, serve with the prawn satay.

Udang Masak Madu Jahe (Honey & Ginger Prawn)

Bahan
  • 500 gr Udang besar, 25 gr Bawang bombay-iris
  • ½ Jeruk nipis, 1 Tomat & 1 Daun bawang-iris2
  • 1 Cabai merah-iris, 1 st Garam, 2 sm Olive oil
  • 2 Bawang putih-cincang, 1 st Lada bubuk
  • 2 Daun jeruk, 1 st Jahe parut
Bahan perendam:
  • 6 sm Madu, 1 sm Kecap asin, 3 sm Kecap manis
  • 1 sm Minyak wijen

Cara membuat
  • Buang kepala udang & belah punggungnya. Kucuri air jeruk nipis lalu biarkan 5 menit. Campur rata bahan perendam. Mskkan udang ke dalam bahan perendam, diamkan 30 menit.
  • Tumis bawang2, cabai & jahe dengan olive oil. Beri daun jeruk, garam, lada, tomat, daun bawang, udang & 2 sm saus perendam. Aduk sampai matang.

Ingredients
  • 500 gr Prawns, 25 gr Onion-sliced, 2 tbsp Olive oil
  • ½ Lime, 1 Green onion & 1 Tomato-sliced, 1 tsp Salt
  • 2 Garlic cloves-minced, 2 Kaffir lime leaves
  • 1 tsp ground Pepper, 1 tsp grated Ginger
  • 1 Red chili-sliced
Marinate sauce:
  • 3 tbsp Sweet Soy sauce, 6 tbsp Honey
  • 1 tbsp Salty soy sauce, 1 tbsp Sesame oil

Directions
  • Remove prawns head & cut along back from top to tail. Rub them with lime juice & then let it stand for 5 minutes. Combine the marinate sauce ingredients; marinade the prawns in the sauce for 30 minutes.
  • Sauté garlic, onion, chili & ginger with olive oil. Add in kaffir lime leaves, salt, pepper, tomato, green onion, the prawns & 2 tbsp marinate sauce. Stir until prawns cooked.

Tumis Asparagus Hijau (Sautéed Green Asparagus)

Bahan
  • 2 st Ebi-tumbuk1 Bawang putih-cincang, 2 Daun salam
  • ½ st Lada, ½ st Pala, 1 st Kecap manis, 1 sm Saus tiram
  • 1 sm Saus soya, 1 st Saus hoisin, Garam secukupnya
  • 1 sm Minyak wijen, 50 ml Kaldu ayamMinyak
Potong/iris terpisah:
  • 150 gr Ayam, 150 gr Asparagus hijau, 75 gr Champignon
  • 50 gr Bawang bombay, 3 Cabai keriting, 1 Tomat

Cara membuat
  • Tumis cabai, bawang putih & bombay dengan sedikit minyak hingga harum. Beri salam, minyak wijen, ayam, jamur & ebi, masak hingga ayam berubah warna.
  • Masukkan asparagus, kecap, saus2, kaldu & bumbu2. Beri tomat, masak hingga bumbu menyerap.

Ingredients
  • 1 Garlic clove-minced, ½ tsp ground Nutmeg, 2 Bay leaves, Salt
  • 1 tbsp Soy sauce, 1 tsp Hoisin sauce, 2 tsp dried Shrimps-grind
  • 1 tsp Sweet soy sauce1 tbsp Sesame oil, ½ tsp ground Pepper
  • 1 tbsp Oyster sauce, 50 ml Chicken broth, frying Oil
Slice/cut separately:
  • 150 gr Chicken fillet, 150 gr green Asparagus, 75 gr Champignon
  • 1 Tomato-sliced, 50 gr Onion-sliced, 3 Cayenne pepper

Directions
  • Sauté garlic, onion & chilies with a little oil until fragrant. Put in bay leaves, sesame oil, chicken, champignon & dried shrimps. Cook until the chicken color changed.
  • Stir in asparagus, sauces, broth & seasoning. Add in tomato & cook until the flavor blended.
