Sambal Gandaria (Chili Paste with Bouea Macrophylla)

Bahan
  • 2 bh Gandaria muda, 14 Cabai keriting, 1 Tomat
  • 7 Rawit, 1 st Terasi-bakar (optional), Garam
  • 2 st Gula merah/jawa, 1 st Minyak jelantah

Cara membuat
  • Rebus cabai & tomat di air panas sebentar. Gerus kasar cabai2, tomat, garam, terasi & gula merah. Potong gandaria, buang bijinya. Potong dagingnya kecil2 tanpa mengupas kulit. Tumbuk kasar. Campurkan potongan gandaria ke sambal, aduk.
  • Beri minyak jelantah, aduk. Hidangkan bersama lalapan.

Ingredients
  • 2 young Bouea Macrophylla fruit, 1 Tomato, Salt
  • 2 tsp Coconut/brown sugar, 7 Bird`s Eye chilies
  • 14 Cayenne peppers, 1 tsp used Frying oil
  • 1 tsp Shrimp paste-roasted (optional)

Directions
  • Boil chilies & tomato in hot water for awhile. Grind chilies, tomato, salt, shrimp paste & brown sugar. Cut bouea macrophyllas into 2 pieces; discard the seeds. Cut the fruit small without peeling the skin. Bruise them a bit. Then combine the fruit with chilies.
  • Pour in used frying oil; mixing it well. Served with vegetables (i.e: cabbage, tomato, cucumber, etc).
