Bahan
- 2 ikat Daun Singkong, 1 batang Daun kunyit
- 8 cm Jahe+2 Sereh+3 cm Lengkuas-geprek
- 400 ml Santan, 5 Daun salam, Air
Haluskan:
- 5 Bawang merah, ½ st Ketumbar, ½ Tomat
- 2 Bawang putih, 7 Cabai keriting, 4 Kemiri
- 3 st Kaldu bubuk, 2 st Garam, 4 cm Kunyit
- Rebus daun singkong hingga empuk lalu peras. Kepalkan, lalu potong per 1 cm agar tidak panjang2 daunnya. Buang airnya.
- Tumis bumbu halus sampai harum. Masukkan 700 ml air, sereh, lengkuas, salam, jahe, daun kunyit & daun singkong. Tuangi santan sambil aduk, didihkan dan masak hingga rasa menyatu.
- Hidangkan Gulai daun singkong dengan nasi hangat bersama lauk lain seperti: Sambal Lado Mudo, Rendang Sapi Padang, Telur Balado, Telur Sambo Padang, Ayam Bakar Padang, Dendeng Batokok atau Dendeng Balado (klik pada link untuk melihat resep2nya).
- 2 bundle of Cassava leaves, 1 stalk Turmeric leaf
- 2 Lemongrass+8 cm Ginger+3 cm Galangal-bruised
- 400 ml Coconut milk, 5 Bay leaves, Water
Grind into a paste:
- 7 Cayenne peppers, 5 Shallots, 4 Candlenuts
- 2 Garlic cloves, ½ tsp Coriander, ½ Tomato
- 3 tsp Broth powder, 4 cm Turmeric, 2 tsp Salt
- Boil cassava leaves until it soften. Wring & squeeze to make it into several balls. Slice each balls every 1 cm. Discard the remaining water
- Sauté the spices paste until fragrant. Put in 700 ml of water, lemongrass, galangal, bay leaves, ginger, turmeric leaf, cassava leaves. Add in coconut milk & bring it to a simmer. Cook until the flavour blended.
