Bahan
- 8 Telur, 2 Daun jeruk, 3 Daun salam, Minyak
- 1 st Air nipis, 1 Sereh & 1 cm Jahe-geprek
- 8 Bawang merah-iris2, 1 Daun Bawang-iris
- 2 sm Santan (opsional)
Haluskan:
- 1 st Garam, ½ st Gula, 8 Cabai merah, ½ Tomat
- 2 Bawang putih, 1 cm Kencur (opsional)
Cara membuat
- Telur dapat dibuat ceplok/direbus keras. Bila telur direbus, lebih enak bila setelah dikupas, telur lalu digoreng hingga berkerak kecokelatan di dalam minyak yang benar2 panas (langkah opsional). Angkat & sisihkan.
- Tumis bawang merah, bumbu halus, daun jeruk, salam, sereh & jahe hingga harum. Beri air jeruk & santan, aduk rata. Masukkan telur yang sudah digoreng & daun bawang, lalu campur dengan saus balado. Angkat.
Ingredients
- 8 Eggs, 2 Kaffir lime leaves, 3 Bay leaves, Frying oil
- 1 tsp Lime juice, 1 cm Ginger & 1 Lemongrass-bruised
- 8 Shallots-thinly sliced, 1 Green onion-sliced
- 2 tbsp Coconut milk (optional)
Grind into a paste:
- 2 Garlic cloves, 1 tsp Salt, ½ tsp Sugar, 8 Red chilies
- ½ of Tomato, 1 cm Lesser galangal (optional)
Directions
- You could make the eggs as fried eggs or hard boiled egg. If you boiled the eggs, this dish will be tastier if you first peel them & then fry eggs in very hot oil until the surface becomes crusty & golden brown (optional step). Remove from the heat & set it aside.
- Heat 3 tbsp frying oil; sauté spices paste, lemongrass, ginger, bay leaves & lime leaves until fragrant. Stir in lime juice & coconut milk. Put in fried eggs; stir to cover them with the spicy paste.
