- 1 kg Daging & 2 Kentang-potong2, 500 ml Santan kental
- 3 Cengkeh-geprek, 4 Daun jeruk, 4 Daun salam, ½ Pekak
- 300 ml Air, 1 st Asam, 2 Kapulaga, 4 cm Kayu manis
- 2 cm Lengkuas & 3 Sereh-geprek, 1 st Gula, Minyak
- 1 st Klabet/1 st Curry bubuk
Haluskan:
- 10 Cabai merah, 10 Bawang merah, 5 Bawang putih
- 1 st Garam, 1 st Lada, 2 st Pala bubuk, 4 cm Jahe
- ½ sm Ketumbar & ½ st Jintan sangrai, 1 cm Kencur
- 5 Rawit, 8 Kemiri, 2 cm Kunyit
Cara membuat
- Tumis bumbu halus dengan minyak sampai harum, beri bumbu2 lain. Masukkan potongan daging & kentang, aduk rata.
- Tuangkan santan dan air, aduk rata. Masak sampai kentang & daging lunak/empuk serta santan berminyak. Aduk sesekali supaya santan tidak pecah.
Ingredients
- 1 kg Beef & 2 Potatoes-sliced, 1 tsp Fenugreek leaves
- 2 cm Galangal & 3 Lemongrass-bruised, 300 ml Water
- 1 tsp Tamarind, ½ Star anise, 4 Bay leaves, frying Oil
- 3 Cloves-crushed, 4 Kaffir lime leaves, 4 cm Cinnamon
- 1 tsp Sugar, 2 Cardamom pods, 500 ml Coconut milk
Grind into a paste:
- ½ tbsp Coriander & ½ tsp Cumin-roasted, 1 tsp Pepper
- 5 Garlic cloves, 4 cm Ginger, 2 tsp ground Nutmeg
- 10 red Chilies, 5 Bird`s eye chilies, 2 cm Turmeric
- 1 tsp Salt, 8 Candlenuts, 1 cm Lesser galangal
- 10 Shallots
Directions
- Sauté the spices paste with oil until fragrant. Stir in all spices. Put in the beef & potato slices & mix them well.
- Pour in coconut milk & water; stir gently. Cook & stirring it occasionally until the potato & beef are tender.
