Bahan
- 700 gr Kentang-iris dadu, 1 sm Gula merah, 250 ml Santan
- 200 gr Udang, 2 Daun jeruk, 10 biji Petai-iris (optional)
- 2 cm Lengkuas & 1 Sereh-geprek, 3 Daun salam, 2 Asam
Haluskan
- 10 Cabai merah, 6 Bawang merah, 3 Bawang putih
- 2 st Garam, 1 Tomat, 1 cm Jahe, 3 Kemiri
Cara membuat
- Remas2 kentang dengan garam secukupnya, diamkan 15 menit, goreng hingga kuning kecokelatan
- Tumis bumbu halus hingga wangi. Masukkan lengkuas, sereh, daun jeruk, salam, asam, petai, santan. Masak sebentar lalu beri gula merah. Aduk sesekali & masak sampai santan susut.
- Masukkan kentang & udang, aduk & masak sampai santan mengering lalu angkat.
- Sajikan bersama nasi putih atau sebagai hidangan pelengkap, misalnya untuk Nasi Kuning-Tumpeng maupun Lontong Sayur Medan.
Ingredients
- 700 gr Potatoes-diced, 250 ml Coconut milk, 3 Bay leaves
- 2 cm Galangal & 1 Lemongrass-bruised, 1 tbsp Brown sugar
- 200 gr Shrimps, 2 Kaffir lime leaves, 2 Tamarind
- 10 Stinky beans-sliced (optional)
Grind into a paste:
- 6 Shallots, 3 Candlenuts, 3 Garlic cloves, 1 cm Ginger
- 10 Chilies, 1 Tomato, 2 tsp Salt
Directions
- Squeeze potatoes with enough salt & then let it stand for 15 minutes. Fry it until golden brown.
- Sauté spices paste until fragrant. Stir in galangal, lemon grass, bay & lime leaves, tamarind, stinky beans, coconut milk. Cook for awhile & then add in brown sugar. Cook until the coconut milk reduce; stir occasionally.
- Put in fried potatoes & shrimps: cook & keep stirring it until it all dries.
- Serve this spicy fried Potato with steamed white rice; as side dish for Indonesian Yellow Rice or Vegetables in coconut broth Medan Style.
