Ayam Bakar Padang (Minangese Grilled Chicken)

Bahan
  • 1 Ayam-potong jadi 8, 10 cm Kayu manis, 500 ml Santan
  • 5 Daun jeruk, 2 Sereh-geprek, 3 Cengkeh, 3 sm Minyak
  • 6 cm Lengkuas-parut
Haluskan:
  • 8 Bawang merah, 4 Bawang putih½ st Lada, 2 st Garam
  • ½ sm Ketumbar, 1 st Jintan, 3 cm Kunyit, 6 Cabai merah
  • 5 Kemiri, 3 cm Jahe½ st Adas manis2 Asam, 1 st Gula

Cara membuat

Ingredients
  • 1 Chicken-cut into 8, 3 Cloves, 2 Lemongrass-bruised
  • 500 ml Coconut milk, 5 Kaffir lime leaves, 3 tbsp Oil
  • 10 cm Cinnamon, 6 cm Galangal-grated
Grind into a paste:
  • 6 Red chilies*, 8 Shallots, 4 Garlic cloves1 tsp Cumin
  • ½ tbsp Coriander, 2 Tamarind½ tsp Anise, 2 tsp Salt
  • ½ tsp Pepper, 1 tsp Sugar, 3 cm Ginger, 5 Candlenuts
  • 3 cm Turmeric
