Gulai Nangka/Cubadak (Minangese Young Jackfruit Curry)

Bahan

  • 300 gr Nangka muda-potong2, 2 st Gula, 2 Kapulaga
  • 350 gr Daging tetelan-iris2, 1 Daun kunyit, Garam
  • 1 st Asam250 ml Santan kental, 1 st Lada bubuk
  • 5 sm Kelapa parut-sangrai lalu haluskan1 Pekak
  • 3 cm Lengkuas & 2 Sereh-geprek, 800 ml Kaldu
  • 3 Daun salam, 5 Daun jeruk, 4 sm Minyak
  • 4 Daun kol & 6 Kacang panjang-iris2 (optional)

Haluskan:

  • 4 Cabai merah, 2 Cabai keriting, 1 cm Kunyit
  • 8 Bawang merah, 4 Bawang putih, 2 cm Jahe
  • 2 st Ketumbar, 4 Kemiri

 

Cara membuat

 

Ingredients

  • 300 gr unripe Jackfruit-slicedBay leaves
  • 350 gr Flank meat-sliced, 1 Turmeric leaves
  • 2 Cardamom pods, 1 Star anise, 2 tsp Sugar
  • 250 ml thick Coconut milk, 4 tbsp Frying oil
  • 3 cm Galangal & 2 Lemongrass-bruised, Salt
  • 5 tbsp grated Coconut-roasted & then grind
  • 5 Kaffir lime leaves, 1 tsp Tamarind
  • 1 tsp ground Pepper, 800 ml Broth
  • 4 Cabbage leaves & 6 Long beans-sliced (optional)

Grind into a paste:

  • 4 Red chilies, 2 Cayenne peppers, 8 Shallots
  • 1 cm Turmeric, 2 cm Ginger, 4 Garlic cloves
  • 2 tsp Coriander, 4 Candlenuts
