- 1 Ayam-potong 8, 1 lt Santan, 2 st Klabet, Minyak
- 2 Sereh & 3 cm Lengkuas-geprek, 150 ml Air kelapa
- 5 Daun jeruk, 3 Daun salam, 1 st Air jeruk nipis
Haluskan:
- 12 Cabai merah, 12 Bawang merah, 5 Bawang putih
- 3 cm Kunyit, 1 sm Ketumbar, 2 cm Jahe, 3 st Garam
- 1 st Gula
- Tumis bumbu halus dng minyak secukupnya. Masukkan ayam, air kelapa, sereh, lengkuas, daun jeruk, salam & klabet masak hingga ayam berubah warna.
- Tuang masuk santan, masak hingga ayam matang & kuah mengental, aduk sesekali.
- Sajikan ayam dengan nasi putih atau Nasi Ulam & lauk2 pendamping lain, misalnya (klik pada link untuk melihat resep2nya): Gulai Nangka/Cubadak, Gulai Padeh Pucuk Ubi, Terong Balado, Balado Terong Isi, Telur Balado, Telur Sambo Dadar Padang, Rendang Sapi, Gulai Daging Padang, Dendeng Balado, Dendeng Batokok dan Sambal Lado Mudo.
- 1 Chicken-cut into 8, 1 lt Coconut milk, 3 Bay leaves
- 2 Lemongrass & 3 cm Galangal-bruised, frying Oil
- 2 tsp Fenugreek leaves, 150 ml Coconut juice
- 5 Kaffir lime leaves, 1 tsp Lime juice
Grind into a paste:
- 5 Garlic cloves, 1 tbsp Coriander, 3 cm Turmeric
- 1 tsp Sugar, 2 cm Ginger, 12 Shallots, 3 tsp Salt
- 12 Red chilies
- Sauté spices paste with a little oil. Put in the chicken, coconut juice, lemon grass, galangal, lime leaves, bay leaves & fenugreek leaves. Cook until the chicken colour changed.
- Pour in coconut milk; cook & stir occasionally until the chicken cooked & the sauce becomes rather thick.
