Sate Babi/Sapi (Pork/Beef Satay)

Bahan
  • 500 gr Daging babi/sapi berlemak, 1½ st Lada bubuk
  • ½ st Asam, 7 sm Kecap manis, 2 Daun jeruk, Garam
  • 2 cm Lengkuas-parut, 30 gr Gula jawa-sisir, Minyak
  • 2 st Cabai bubuk, 2 Jeruk limau, 3 sm Kecap asin
  • 1 Daun salam75 ml Air, 1 sm Mentega-cairkan
  • Tusukan sate
Haluskan:
  • 8 Bawang merah, 4 Bawang putih, 1 sm Ketumbar
  • 7 Kemiri, 2 cm Kunyit, ½ st Jintan

Cara membuat
  • Tumis bumbu halus & lengkuas dengan minyak. Masukkan 4 sm kecap manis, kecap asin, gula jawa, asam, 1 st lada, garam, air, cabai, daun jeruk & salam. Masak hingga saus mengental.
  • Potong2 daging persegi, Remas2 dengan saus. Tutupi wadah & simpan di kulkas 6-8 jam.
  • Ulasan: Campur 1½ sm saus perendam dengan 3 sm kecap, ½ st lada, mentega & air limau.
  • Tusuk 3-4 daging di setiap tusukan sate. Semir daging dengan bumbu ulasan, bakar hingga berubah warna, balik sate, semir lagi dengan bumbu ulasan, bakar hingga matang.

Ingredients
  • 500 gr fatty Pork/Beef meat, 1½ tsp ground Pepper
  • ½ tsp Tamarind, 3 tbsp salty Soy sauce, 1 Bay leaf
  • 30 gr Brown sugar2 Kaffir lime leaves, frying Oil
  • 2 cm Galangal-grated2 Kaffir lime75 ml Water
  • 2 tsp Chili flakes, 7 tbsp sweet Soy sauce, Salt
  • 1 tbsp Butter-melted, Skewers
Pureed spices:
  • 7 Candlenuts, 2 cm Turmeric, 1 tbsp Coriander
  • 4 Garlic cloves, 8 Shallots, ½ tsp Cumin

Directions
  • Sauté pureed ingredients & galangal with little oil. Put in 4 tbsp sweet soy sauce, salty soy sauce, brown sugar, tamarind, 1 tsp pepper, salt, water, chili flakes, lime leaves & bay leaf. Cook until the sauce is rather thick.
  • Slice the meat into cubes; rub with the sauce. Cover the bowl & marinate meat in the fridge for 6-8 hours. Remove meat from the fridge & then thread meat chunks onto the skewers.
  • Basting mixture: Mix 1½ tbsp of marinade sauce with 3 tbsp sweet soy sauce, ½ tsp pepper, butter & kaffir lime juice.
  • Brush meat with the basting mixture; grill until the meat color changed, then turn the satay over. Brush again the meat with basting mixture & grill until the meat cooked.
