Ayam Goreng Bumbu Sambal Leunca (Fried Chicken in Black Nightshade Chili Paste)

Bahan
-  500 gr Fillet ayam-ptg2, Garam                    Bahan Sambal:
-  1 Jrk limau, 1 Daun baw-iris                         -  60 gr Leunca, 2 Dn.jrk, 3 st Garam
-  ¼ Jrk nipis, Minyak goreng                             Haluskan utk sambal:
Haluskan:                                                             -  10 Cabai merah, 4 Cabai keriting
-  1 st Ketumbar, 1 cm Kunyit, Garam              -  ½ st Terasi, 2 Kemiri, 15 gr Gula mrh
-  1 st Lada, 1 Sereh (pthnya), 2 Baw.pth       -  6 Baw.mrh, 2 Baw.pth

Cara membuat
-   Ayam: Remas2 ayam dng bumbu hls, garam & air jrk nipis. Diamkan 20 mnt. Goreng hingga kekuningan.
-   Sambal: Tumis bumbu sambal hls & daun jrk sampai harum. Mskkan garam & leunca, aduk & masak hingga sambal matang.
-   Mskkan ayam, campur dng sambal. Beri daun bawang & kucuri air jrk limau. Aduk rata, angkat.

Ingredients
-  500 gr Chicken fillet-cuted, Salt          Chili Paste ingredients:
-  1 Kaffir Lime, 1 Green onion-cut          -  60 gr Black nightshade, 2 Kaffir lime leaves
-  ¼ Lime, Frying oil                         -  3 tsp Salt
Grind into a past-for chicken:                  Grind into a paste-for Chili paste:
-  1 Lemon grass (only the white part)      -  6 Shallots, 2 cloves Galic, 15 gr Brown sugar
-  1 cm Turmeric, 2 cloves Garlic, Salt     -  10 Red chilies, 4 Cayenne peppers
-  1 tsp Coriander, 1 tsp Pepper                -  ½ tsp Shrimp paste, 2 Candlenuts

Directions
-   Chicken: Mix & squeeze the chicken with spices paste, salt & lime juice. Let it stand for 20 mins. Fry the chicken until golden brown.
-   Chili paste: Sauté the spices paste & kaffir lime leaves until fragrant. Stir in the salt & black nightshade until the chili paste cooked.
-   Add in the chicken, combine with the chili paste well. Stir in green onion & kaffir lime juice.
