In Indonesian & English (the English version is below the recipe written in Indonesian)
- 6 Kacang panjang & 1 Ketimun-iris kecil2, 1 Jeruk limau
- 2 Terong ungu bulat-iris tipis kecil, 1 sm Minyak jelantah
- 4 Bawang merah-iris halus, 1 Tomat-potong kecil
Haluskan untuk sambal:
- 2 Cabai keriting, 3 Rawit, ½ st Terasi, Gula, Garam
- Campur bahan halus dengan tomat lalu tumbuk kasar. Beri bawang merah, perasan air limau & minyak jelantah lalu aduk rata.
- Aduk sayuran lain dengan sambal tersebut, tumbuk sekedarnya dengan ulekan. Taruh di mangkuk saji.
- Beberuk terong ini dapat dihidangkan sebagai pelengkap makanan seperti Manuk Ragi Rajang Khas Lombok, Ayam Panggang/Bakar Bumbu Santan, Pelalah Manuk/Ayam Khas Lombok & Ayam Bakar Taliwang.
- 6 Long beans & 1 Cucumber-thinly sliced, 1 Kaffir lime
- 2 round purple Eggplant-small cut, 1 tbsp used frying Oil
- 4 Shallots-thinly sliced, 1 Tomato-slice small
Grind into a paste:
- 2 Cayenne peppers, 3 Birds eye chilies, Sugar, Salt
- ½ tsp Shrimp paste (optional)
- Mix spices paste with tomato & then coarsely pound the tomato. Stir in shallot slices, kaffir lime juice & used frying oil.
- Add in other vegetables & then roughly crush/bruise them with a mortar. Place the salad in a serving bowl.
- You could serve this Eggplant Salad as complement for dishes such as Fragrant Spicy Chicken à la Lombok, Baked/Grilled Chicken in Coconut Milk Sauce, Spicy Bruised Chicken à la Lombok & Lombok Style Spicy Grilled Chicken.
