Bahan
- 450 gr Tahu-potong dadu ukuran sedang, 1 st Jahe cincang
- 2 Sereh, ½ st Kunyit bubuk, 2 st Bawang putih cincang, Air
- 2 Bawang merah & 25 gr Bawang bombay-iris halus, Garam
- Daun kucai/seledri-iris, Kemangi, ½ st Cabai bubuk, Minyak
- 1 Wortel kecil-iris korek api, 4 sm Kacang sangrai cincang
- 1½ st Gula, 1 st Ketumbar bubuk, 3 Daun jeruk-iris halus
- 1 sm Kecap ikan, 1½ sm Saus soya, 1-2 Cabai-iris
Cara membuat
- Campur air yang cukup untuk merendam tahu dengan garam, 1 st bawang putih cincang & ketumbar bubuk. Rendam tahu 30 menit. Tiriskan lalu goreng, sisihkan. Buang bagian luar dari sereh lalu cincang halus putihnya. Campur tahu dengan sereh, daun jeruk, jahe, cabai bubuk, kunyit, gula & garam kemudian sisihkan.
- Panaskan 4 sm minyak dengan api sedang-besar. Tumis cabai, bawang merah & bombay sampai wangi. Kecilkan api ke sedang, beri wortel & 1 st bawang putih, masak sampai wortel mulai empuk tapi masih renyah. Tuang masuk saus soya, kecap ikan & tahu berbumbu. Aduk sampai rasa menyatu. Beri ½ bagian dari kacang, daun kucai/seledri & kemangi, masak & aduk sebentar saja. Matikan api.
- Angkat dari pan & letakkan di piring/mangkuk saji. Taburi dengan sisa kacang cincang.
Ingredients
- 450 gr Tofu-medium size cubed, 1-2 Chillies-sliced, Water
- 2 Lemon grass stalks, ½ tsp Turmeric powder, 1½ tsp Sugar
- 1 small Carrot-julienne, 4 tbsp ground toasted Peanuts, Oil
- 1½ tbsp Soya sauce, ½ tsp Chilli flakes, 1 tsp minced Ginger
- 2 tsp minced Garlic, 2 Shallots & 25 gr Onion-thinly sliced
- 1 tsp Coriander powder, 3 Kaffir lime leaves-thinly sliced
- 1 tbsp Fish sauce, slice Chives/Celery leaves, Basil, Salt
Instructions
- Combine enough water to soak the tofu with some salt, 1 tsp of minced garlic & coriander powder. Soak tofu for 30 minutes. Drain & then fry tofu; set it aside. Peel off the dry outer layer of lemon grass stalks & then finely mince the white part. Combine fried tofu with minced lemon grass, Kaffir lime leaves, ginger, chilli flakes, turmeric, sugar & salt. Set it aside.
- Heat 4 tbsp of oil over medium-high heat. Sautè the chillies, shallots & onion until fragrant. Turn down the heat to medium, then add in carrot & 1 tsp of garlic. Cook until the carrot soften but still crunchy. Put in soya sauce, fish sauce & seasoned tofu. Cook & stir until the flavour blended. Sprinkle with ½ parts of the peanuts, chives or celery leaves & basil. Stir to combine it well for few seconds & then turn off the heat.
- Remove from the pan & put it in a serving plate/bowl. Sprinkle with the rest of peanuts.
