Rawon (Javanese Black Beef Soup)


In Indonesian & English

Bahan
350 gr Daging tetelan-ptg2, 1 st Air asam   Haluskan:
100 gr Kentang-ptg2, 1 Daun bawang-iris     -  6 Bawang merah, 3 Bawang putih
800 ml Air+2 st Kaldu bbk, 5 Daun jeruk      - 2 st Garam, 1 st Lada, 1 st Gula
3 D. Salam, 1 st Gula jawa-sisir, 5 Kluwak   -  4 Kemiri, 1 st Ketumbar, 2 cm Kunyit
3 cm Lengkuas, 1 Sereh-geprek, Mnyk syr    2 cm Jahe, 2 Cabai merah
Pelengkap:                                                                
Telur Asin, Kerupuk udang, Sambal, 100 gr Toge pendek, Daun Kemangi

Cara membuat
-   Pecahkan kluwak, ambi isinya. Rendam dng air hangat hingga agak empuk, tiriskan kmd hlskan. Tumis bumbu hls, kluwak, sereh, lengkuas, daun jeruk & salam dng minyak syr.
-   Didihkan air+kaldu, mskkan tumisan, gula jawa, air asam, kentang & daging. Masak sampai daging empuk, beri daun bawang. Apabila air kurang, tambahkan dng air hangat sesuai selera. Angkat
-   Penyajian: Taburi toge. Hidangkan dng daun kemangi, sambal, kerupuk & telur asin.

Ingredients
350 gr Flanks meat-cut, 1 tsp Brown sugar   Grind into a paste:
100 gr Potatoes-dice cut, 5 Kluwak nuts       -  1 tsp Sugar, 6 Shallots, 1 tsp Pepper
800 ml Water+2 tsp Beef Broth powder        -  2 cm Ginger, 2 cm Turmeric, 2 tsp Salt
1 tsp Tamarind juice, 3 Bay leaves, Veg.oil  -  3 cloves Garlic, 1 tsp Coriander
3 cm Galangal, 1 Lemongrass-bruised              -  2 red Chilies, 4 Candlenuts
5 Kaffir lime leaves, 1 Green onion-cut
Complements:
100 gr Bean sprouts, Lemon Basil leaves, Salted Eggs, Shrimp crackers, Chili paste

Directions
-   Break the kluwak shells & take the nuts out, then soaked it in warm water until softened. Drain & then grind the nuts. Sauté ground spices, kluwak, lemongrass, galangal, lime leaves & bay leaves with vegetables oil
-   Boil the water & broth powder, put in sautéed spices, brown sugar, tamarind juice, potatoes & meat. Cook until the meat tender. Put in green onion. Add in some warm water if the water reduced too much. Remove from the heat.
-   Serving: Sprinkle the soup with bean sprouts, served with lemon basil leaves, chili paste, shrimp crackers & salted eggs.
