Soup Iga Sapi (Beef Ribs Soup)


In Indonesian & English

Bahan
-  1 kg Iga sapi dng daging tbl-ptg2    -  1 Tomat, 300 gr Wortel, 250 gr Kentang-ptg2
-  2 Star anis, 2 btg Seledri-ikat         -  1 st Gula, 1 Sereh-geprek, 2 Daun salam
-  2 Prei-iris, 10 Rawit (optional)         Haluskan:
-  2 sm Air Jrk nipis, 5 Cengkeh          -  4 Bawang putih, 2 cm Jahe , 1½ st Pala
-  3 btr Kapulaga, Baw. goreng             -  8 Bawang merah, 1 st Lada
-  2 cm Lengkuas-geprek, 1¾ lt Air      -  3 Cabai merah, 1 sm Garam

Cara membuat
-   Rebus kentang. Sisihkan. Taburi iga dng garam & lada, kmd goreng sampai kecoklatan.
-   Tumis bumbu hls. Rebus iga dng bumbu hls, salam, lengkuas, cengkeh, star anis, kapulaga & seledri sampai dagingnya lunak. Buang bumbu2 kasar & seledrinya.
-   Beri air jeruk nipis, rawit & gula. Masak sampai bumbu meresap. Mskkan kentang, prei, tomat & wortel, masak lagi sebentar. Taburi bawang goreng.

Ingredients
- 1 kg Beef short ribs/cut5 Cloves        - 300 gr Carrot & 250 gr Potatoes-cut
- stalk Celery-bundled, 2 Star anise     - 2 Bay Leaves, 1¾ lt Water
- 10 Bird`s eye chilies (optional)               - 1 Lemon grass-bruised
- 2 tbsp Lime juice, 2 Leeks-sliced          Grind into a paste:
- 3 Cardamoms, deep fried Shallots          - 8 Shallots, 1 tsp Pepper, 1½ tsp Nutmeg
- 2 cm Galangal-crushed                             - 3 Red chilies, 1 tbsp Salt
- 1 tsp Sugar, 1 Tomato-cut                     - 4 cloves Garlic, 2 cm Ginger

Directions
-   Boil potatoes until it cooked, drain & set aside. Sprinkle the ribs with salt & pepper; then fry in hot oil until lightly browned. Set aside.
-   Sauté the spices paste. Boil ribs with sautéed spices, bay leaves, galangal, cloves, star anise, cardamoms & celery until the meat tender. Discard dried spices & celery stalk.
-   Pour in lime juice, sugar & add chilies. Cook until the flavor blended. Add in potatoes, leeks, tomato & carrots. Cook for awhile. Sprinkle with deep fried shallots before serving.
