Bahan
- 500 gr Terigu protein tinggi, ½ st Kayu manis bubuk
- 450 ml Susu hangat, 12 gr Ragi kering, 28 gr Gula
- 1 Apel-kupas & iris dadu ½ cm, ½ Lemon-peras
- 75 gr Kismis-rendam di air panas lalu tiriskan
- 9 gr Garam, 1 Telur-kocok, Minyak netral
- Gula bubuk-untuk taburan
Cara membuat
- Campur 100 ml susu dengan ragi & 2 gr gula. Tunggu 5-10 menit sampai berbusa.
- Campur apel dengan air lemon. Hangatkan apel & kismis di microwave sebentar.
- Campur rata terigu, kayu manis, garam & sisa gula di mangkuk besar. Beri telur & larutan ragi. Aduk rata lalu kocok dengan mixer kecepatan rendah selama 2 menit. Tambah kecepatan 1 tingkat, secara bertahap tuangi susu. Kocok sampai adonan halus tak bergerindil. Anda dapat juga mengaduknya dengan spatula, tapi pastikan glutennya terbentuk, agar nanti roti tidak padat. Beri apel & kismis, aduk rata. Tutup wadah dengan lap & simpan di tempat hangat selama ± 45 menit (tanpa mixer 60-70 menit), atau sampai adonan naik 2 kalinya . Aduk adonan yang telah naik dengan sendok kayu atau spatula untuk mengeluarkan gasnya.
- Panaskan minyak yang banyak dengan panas sedang hingga mencapai ± 175° C di pan dalam. Celupkan 1 sendok biasa & 1 sendok ice cream (gunakan 2 sendok biasa) ke dalam minyak suhu ruang. Ambil 1 sendok ice cream adonan, dorong adonan masuk ke pan dengan sendok satunya. Jangan masukkan & masak adonan terlalu berjejal di dalam penggorengan, 3-4 adonan saja tiap kali. Masak adonan hingga kuning kecokelatan, balik & masak lagi hingga kuning kecokelatan merata (jangan terlalu cokelat, akan terasa gosong). Angkat, keringkan di kertas untuk menyerap minyak. Tunggu hingga sedikit mendingin lalu taburi/guling2kan di gula bubuk.

- 12 gr Dry yeast, 28 gr Sugar, 450 ml warm Milk
- 1 Apple-peeled-cored & then diced ½ cm, ½ Lemon
- 75 gr Raisin-soaked in hot water & then drain
- 1 Egg-beaten, Neutral frying fat
- Powdered sugar-sprinkle
Directions
- Combine yeast with 100 ml warm milk & 2 gr of sugar. Let stand for 5-10 minutes, until it‘s foamy.
- Combine lemon juice with the apple. Warm up the apple & raisins in the microwave for awhile.
- In a large bowl, mix together the flour, cinnamon, salt & the rest of sugar. Stir in the egg & yeast mixture. Beat with an electric mixer at the lowest speed for ~ 2 minutes. Increase the speed 1 level, gradually pour in the milk. Beat until the dough smooth with no lumps. You could also just mix it with a spatula, but make sure the gluten is formed so later on the oliebollen won‘t be dense. Stir in the apple & raisins until it combine well. Cover the bowl with a cloth & put in a warm place for ~ 45 minutes (without mixer 60-70 minutes), or until doubled in size. Stir dough well with a wooden spoon/spatula to release the gas.
- Preheat the oil in a deep fryer to ~ 175°C. Put an ice cream spoon & 1 normal spoon (or use 2 normal spoon) into room temperature oil first. Scoop 1 ice cream spoon dough & push it out into the hot oil with the other spoon. Drop 3-4 dough with the ice cream spoon at a time into the oil. Fry until both sides nicely golden browned. Lift from the oil; drain on paper towels. Let it cool down a bit & then sprinkle with powdered sugar.
