Sayur Kare Jawa (Javanese Vegetables Curry)


In Indonesian & English

Bahan
-  200 gr Daging Sapi/Ayam-ptg2              -  2 Daun Jeruk, 2 cm Lengkuas-geprek
-  200 gr Kentang-ptg2, 500 ml Kaldu      -  300 ml Santan, 2 sm Air asam
-  100 gr Buncis & 150 gr Wortel-ptg2   Haluskan:
-  5 Daun kol-ptg2, 2 Daun Salam             -  5 Bawang merah, 2 cm Jahe
-  1 Tomat-ptg 2, 2 st Air Jeruk nipis    -  2 Bawang putih, ½ st Lada
-  3 Cabai mrh & 1 Daun bawang-ptg2     -  3 Kemiri, 2 st Ketumbar
-  1½ st Garam, 1 Sereh-geprek                -  3 cm Kunyit, 1 st Gula

Cara membuat
-   Tumis bumbu halus, daun jeruk, salam, lengkuas & sereh. Masukkan daging, aduk, tuangi kaldu, didihkan. Masukkan kentang, air asam & cabai, setelah kentang ½ matang beri garam & santan, didihkan.
-   Masukkan kol, wortel, buncis, tomat, daun bawang & air jeruk, aduk sampai matang.

Ingredients
-  200 gr Beef/Chicken meat-cut               -  2 tbsp Tamarind juice, 2 Bay leaves
-  200 gr Potatoes-cut, 500 ml Broth      -  2 cm Galangal & 1 Lemongrass-bruised
-  100 gr Beans & 150 gr Carrot-cut       Grind into a paste:
-  5 sheets Cabbage-cut, 1½ tsp Salt       -  5 Shallots, 2 cm Ginger     
-  1 Tomato-cut, 300 ml Coconut milk     -  2 cloves Garlic, 3 cm Turmeric
-  3 Red chilies & 1 Green onions-sliced   -  3 Candlenuts, 2 tsp Coriander
-  2 Kaffir lime leaves, 2 tsp Lime juice   -  ½ tsp Pepper, 1 tsp Sugar

Directions
-   Sauté ground spices, lime leaves, bay leaves, galangal & lemongrass. Put in the meat; stir well. Pour in the broth; bring it to a simmer. Add in the potatoes, tamarind juice & chilies, after the potatoes ½ tendered, pour in coconut milk & season with salt; bring it to a simmer.
-   Put in cabbage, carrots, beans, tomato, green onions & lime juice, stir well until all are cooked.
