Soup Bihun Bakso Gelap ala Thai (Thai Dark Meatball & Noodle Soup)




In Indonesian & English

Bahan
-  200 gr Daging sapi/babi-ptg, 20 Bakso    -  Jmr kancing/champignon-tumis (opsional)
-  200 gr Bihun, 1 sm Saus tomat                Bahan Kuah:
-  3 sm Saus Soya, 1 sm Kecap mns            -  1 btg Seledri bsr, 3 cm Lengkuas-geprek
-  2 st Kecap ikan, 2 sm Seledri cincang     -  5 Baw.pth-hlskan, 1½ st Gula, 2 Daun jrk
-  2 sm Daun ketumbar cincang, Minyak      -  1 st Jahe parut, 1 Baw.bombay-belah 4
-  2 Daun bawang-iris, 100 gr Toge             -  ½ sm Ketumbar-hlskan, 3 cm Kayu mns
-  100 gr Kangkung-potong2 lalu rebus        -  1 st Lada hitam-hlskan, 1 st Air jrk nipis
-  4-6 sm Darah sapi/babi (sy tdk pakai)    -  2 lt Kaldu sapi, 1 Sereh-geprek
-  1 sm Baw.pth goreng, Cabai-iris2        -  2 st Bumbu ngohiong, 2 Pekak, Garam

Cara membuat
-   Kuah: Tumis baw.pth, ketumbar & lada htm. Didihkan kaldu dng tumisan & bahan kuah lainnya, masak sampai kuah tersisa 1½ liter. Saring kuah.
-   Mskkan bakso & daging ke kuah, matangkan. Angkat bakso & daging, sisihkan. Mskkan saus2 & kecap2 kedlm kuah, aduk rata. Angkat kaldu dari api, mskkan darah & aduk rata selagi panas.
-   Seduh bihun dng air pns, tiriskan kmd susun di mangkuk2 saji, beri bakso, daging, daun bawang, jamur, toge, kangkung, daun ketumbar, seledri cincang & baw.putih goreng. Tuangi kuah. Sajikan panas2 dng potongan cabai.

Ingredients
-  200 gr Pork/Beef-sliced, 20 Meatballs     -     Button Mushrooms-sautéed (optional)
-  200 gr Rice noodle, 1 tbsp Fried garlic    Soup ingredients:
-  3 tbsp Soy sauce, 100 gr Bean sprout      -  2 tsp Chinese 5-Spice powder, 2 Star anise
-  2 tsp Fish sauce, 1 tbsp Tomato sauce     -  5 cloves Garlic-grind, 1½ tsp Sugar
-  2 tbsp chopped Cilantro leaves                   -  1 tsp grated Ginger, 2 Kaffir lime leaves
-  2 Green onions-sliced, Frying oil                -  ½ tbsp Coriander-grind, 3 cm Cinnamon
-  100 gr Water spinach-cut & boiled           -  1 tsp Black peppercorns-grind, Salt
-  2 tbsp chopped Celery, Chilies-sliced        -  2 lt Beef stock/fond, 1 Onion-quartered
-  1 tbsp sweet Soy sauce                              -  1 Lemon grass-bruised, 1 stalk Celery
-  4-6 tbsp Cow/Pig blood (I didnt use it)     -  3 cm Galangal-crushed, 2 tsp Lime juice

Directions
-   Soup: Sauté the garlic, coriander & black pepper. Boil stock with sautéed spices & all soup ingredients until only ± 1½ liter stock left. Strain the stock.
-   Put in meatballs & pork/beef, simmer until all are cooked. Take the meatballs & beef/pork out from soup, set aside. Pour all sauces into the stock; stir until incorporated. Remove soup from heat; stir in the blood while it`s still hot.
-   Soak noodle in warm water until it`s soft & then drain. Place the noodle in serving bowls; add in meatballs, sliced pork/beef, mushrooms, green onions, water spinach, bean sprout, cilantro, chopped celery & fried garlic. Ladle the soup among serving bowls. Serve piping hot with sliced chilies.
