Bahan (Untuk 4 orang)
Perkedel daging:
- 500 gr daging Babi/paha Ayam/Sapi giling dengan 20% lemak
- 2 Sereh-cincang halus*, 1½ st Saus tiram, Lada hitam bubuk
- 3 Bawang merah & 2 Bawang putih-cincang halus, 5 sm Air
- 1½ sm Kecap ikan, 38 gr Gula, 1 sm Minyak-untuk di pan
Saus Nipis & Kecap ikan:
- 4 sm Kecap ikan, 40 ml Air jeruk nipis, 300 ml Air
- 2 Bawang putih-cacah, 5 sm Gula
Acar:
- Wortel sedang, Pepaya muda/Labu siam, 3 st Garam
- 2 sm Gula, 3 sm Cuka
Utk penyajian:
- Bihun, Selada, Daun ketumbar, Toge-seduh air panas
- Daun mint, Daun kemangi, 1 Ketimun-iris korek api, Cabai iris
- Potongan jeruk nipis, Kol merah-iris2, Kacang sangrai cacah
Cara membuat
- Acar: Anda membutuhkan ± 1 cup dari masing2 wortel & papaya. Iris tipis wortel & pepaya lalu campur & remas dengan garam untuk membuatnya renyah, diamkan selama 10-15 menit. Buang air yang keluar, bilas di air mengalir lalu tiriskan. Beri gula & cuka. Biarkan selama 1 jam.
- Didihkan gula & 2 sm air di pan. Kecilkan api ke sedang, masak sampai cairan berwarna kuning & mulai gelap. Kecilkan api & teruskan memasak sampai cairan berwarna gelap seperti karamel. Matikan api lalu dengan hati2 masukkan 3 sm air. Aduk sampai menyatu lalu angkat dari api. Sisihkan sampai mendingin.
- Masukkan daging, saus karamel & bahan daging lainnya di mangkuk. Aduk beberapa menit sampai tercampur rata. Diamkan adonan 15 menit (lebih enak bila ditaruh di kulkas 1-2 jam).
- Saus: Sementara itu, campur gula, air & kecap ikan di pan. Masak di api sedang-rendah sampai gula larut. Matikan api lalu aduk masuk bawang putih & air nipis. Cicipi & sesuaikan bumbu jika perlu. Biarkan hingga dingin lau beri beberapa potongan acar wortel & pepaya. Sisihkan.
- Masak bihun sesuai dengan instruksi pada kemasan lalu tiriskan. Siapkan semua herba & sayuran lalu atur di piring saji bersama potongan nipis, cabai iris & bihunnya. Sisihkan.
- Panaskan pan untuk memanggang di kompor (panaskan panggangan bbq gas/arang) di api sedang-besar. Jika memanggang di pan, ulasi minyak. Bentuk daging menjadi perkedel. Setelah pan panas, panggang perkedel selapis saja (jangan ditumpuk) sampai matang & kecokelatan di kedua sisinya, balik perkedel diantaranya. Angkat dari api.
- Sajikan perkedel dengan acar, kacang, cabai, bihun & piring sayuran-herbanya.
- * Cincang hanya bagian putih & hijau mudanya saja dari sereh.
Ingredients (for 4 persons)
The patties:
- 500 gr ground Pork with 20% of fat *, 38 gr Sugar
- 2 Lemongrass-finely minced**, 1½ tsp Oyster sauce
- 2 Garlic cloves-minced, 3 Shallots-finely chopped
- 1½ tbsp Fish sauce, ground Black pepper
- 5 tbsp Water, 1 tbsp Frying oil-grill in a pan
Lime fish sauce dressing:
- 4 tbsp Fish sauce, 40 ml Lime juice, 5 tbsp Sugar
- 2 Garlic cloves-minced, 300 ml Water
For serving:
- Rice vermicelli noodles, 1 Cucumber-julienne, Lettuce
- Fresh Cilantro, Thai basil & Mint, Red cabbage-sliced
- Lime wedges, Bean sprout-blanched, sliced Chilies
- chopped Peanuts-roasted
Pickles:
- young Papaya/Chayote/German Turnip, 3 tbsp Vinegar
- medium size Carrot, 2 tbsp Sugar, 3 tsp Salt
Instructions
- Pickle: You’ll need ~ 1 cup of each sliced carrot & papaya. Thinly slice carrot & papaya. Mix & squeeze it with salt to make it crunchy; set it aside for 10-15 minutes. Discard the liquid, rinse under running water & then drain. Stir in sugar & vinegar. Let it sit for 1 hour.
- In a pan, bring sugar & 2 tbsp of water to a boil. Lower the heat to medium, continue to simmer until the mixture turn yellow & getting darker. Reduce the heat & keep on simmering, until it has a darker caramel color. Turn off the heat & carefully add 3 tbsp of water. Stir to combine. Remove from the heat. Set aside until it cool down.
- In a mixing bowl, add pork, caramel sauce & all patties ingredients. Mix for a couple of minutes to combine it well. Marinate for minimum 15 minutes (in the fridge for 1-2 hours for tastier results).
- Sauce: Meanwhile, combine sugar, water & fish sauce in a sauce pan. Cook over a medium-low heat until the sugar dissolved. Turn off the heat; stir in minced garlic & lime juice. Taste & adjust the ingredients if needed. Let it cool down & then add in some of sliced carrots-papaya pickle. Set it aside.
- Prepare vermicelli noodles according to package instructions & then drain. Prepare all herbs & veggies, then arrange them in a herbs platter together with the lime wedges, chilies & noodles. Set it aside
- Heat a grill pan (preheat gas/charcoal grill) over medium high heat. If you’re grilling it in a pan, add the oil. Shape the meat into patties. Once the pan is hot, grill it in a single layer until it's fully cooked & golden brown on both sides; flip them over in between. Remove from the heat.
- Serve the patties with the pickles, peanuts, chilies, noodles & herbs platter.
- * For a Halal version, substitute pork with ground Beef/Chicken thigh flesh & add fat.
- ** Minced only the white & light green parts of the lemongrass.
