Nasi Gandul Pati (Gandul Rice from Pati)

Bahan
500 gr Daging-ptg 2X3X1cm, Dn pisang      -  Telur Kcp, Tempe grngPelengkap
250 gr Tetelan-ptg kcl2, 2 Dn. Salam         Bumbu Hls A:
2 Sereh & 4 cm Lengkuas-geprek                   -  3 Baw.pth, ½ sm Lada, 3 cm Kencur
600 ml Santan, 5 sm Kcp mns, 1 st Gula    -  1 st Jintan, 2 st Ketumbar, 5 Kemiri
600 ml Kaldu sapi, 1 st Gula merah sisir     Bumbu Hls B:
6 Daun jeruk, 3 st Garam, Nasi, Minyak     -  3 cm Jahe, 1 st Jintan, 3 Baw.mrh
Baw.goreng, Kerupuk, Rawit (optional)          -  1 Kluwak, 3 Cabai mrh, 2 Baw.pth

Cara membuat
-   Memasak daging: Tumis bumbu halus A dng minyak goreng sampai wangi. Beri daun jeruk, salam, sereh, lengkuas, garam, gula, gula merah, kecap & daging, lalu mskan 400 ml santan & kaldu. Masak dng api kecil hingga daging lunak dan air berkurang sambil sesekali diaduk. Angkat daging, tiriskan & goreng hingga kecoklatan (spt empal). Simpan kuahnya.
-   Membuat kuah: Tumis bumbu hls B dng minyak. Mskkan ke sisa kuah merebus daging. Beri tetelan, masak hingga empuk. Mskkan sisa santan, didihkan sambil sesekali diaduk.
-   Penyajian: Alasi piring dng selbr daun pisang, ltkkan nasi & daging goreng diatasnya, siram dng kuah & tetelan. Taburi baw.goreng, hidangkan bersama kerupuk, rawit, tempe & Telur Kecap.

Ingredients
500 gr Beef meet-cut into 2X3X½cm    -  Braised soy sauce egg, fried tempeh-side dish
250 gr Flanks meat-small cut                  Spices A-Grind into a paste:
2 Lemongrass+4 cm Galangal-bruised     -  3 cloves Garlic, ½ tbsp Pepper
600 ml Coconut milk, 1 tsp Sugar          -  2 tsp Coriander, 5 Candlenuts
600 ml Beef stock, 1 tsp Brown sugar  -  3 cm Lesser galangal, 1 tsp Cumin
6 Kaffir lime leaves, 2 Bay leaves          Spices B-Grind into a paste:
3 tsp Salt, 5 tbsp sweet Soya sauce     -  3 cm Ginger, 3 Shallots, 2 cloves Garlic
Fried onions, Crackers, Fry.fat, Rice   -  1 Kluwak nuts, 3 Red chilies, 1 tsp Cumin
Bird`s eye chilies (optional), Banana leaves

Directions
-   Preparing the meat: Sauté spices A until fragrant. Put in lime leaves, bay leaves, lemongrass, galangal, salt, sugar, brown sugar, soya sauce & 500 gr beef chunks. Add in 400 ml coconut milk & beef stock. Cook over low heat until the meat tender & the water reduced. Stir occasionally. Remove the meat, drain & fry until golden brown. Save the soup.
-   Preparing the Soup: Sauté spices B until fragrant. Put sautéed spices into the soup. Add in flanks meat, cook until the meat tender. Pour in the rest of coconut milk, bring it to a simmer; stir occasionally.
-   Serving: Cover a deep serving plate surface with banana leaf. Place enough steam rice above it. Put fried meat above the rice & then pour in the soup. Sprinkle with fried onions. Serve with crackers, bird`s eye chilies, fried tempeh & Braised soy sauce eggs
