Semur Bola2 Daging Isi Telur (Egg Stuffed Meatballs Stew)

Bahan
  • 300 ml Kaldu, 3 sm Kecap manis, 1 Tomat-potong2
  • 2 Cengkeh, 2 Daun salam, ½ Bawang bombay-cincang
  • 2 cm Lengkuas & 1 cm Jahe-geprek, 2 Cabai-iris
  • 2 sm Bawang goreng-gerus, ½ st Lada, ½ st Pala
  • 2 Bawang putih, 1 st Ketumbar, 2 Kemiri-haluskan
  • Garam & Minyak secukupnya
Bola2 Daging:
  • 300 gr Daging cincang, 3 Telur, ¼ st Pala bubuk
  • 1 st Lada bubuk, 1 Bawang putih-haluskan, Panir
  • 1 Putih telur, 3 st Bawang goreng-haluskan
  • 1 st Garam, 2 st Terigu

Cara membuat
  • Bola daging: Rebus & kupas telur. Aduk rata daging dengan putih teur, bawang2, pala, lada, garam & terigu. Bentuk bulat pipih lalu letakkan 1 telur di tengahnya. Rapatkan hingga menutup telur, bentuk bola2 (jadi 3 bola). Gulingkan di panir, lalu goreng di minyak dengan api sedang hingga kecokelatan & matang.
  • Tumis bumbu halus, bombay, cabai, lengkuas & salam hingga layu. Tuangi kaldu, beri kecap manis, jahe, cengkeh, bawang goreng, lada, pala, tomat & sedikit garam. Masak hingga bumbu meresap.
  • Mskkan bola2 daging, aduk2 sebentar hingga kuah mengental. Angkat.

Ingredients
  • 300 ml Beef broth, 3 tbsp sweet Soy sauce, 2 Cloves
  • 2 sm Fried shallots-grind, 2 Bay leaves, ½ tsp Pepper
  • 2 cm Galangal & 1 cm Ginger-crushed, ½ tsp Nutmeg
  • 2 Candlenuts+2 Garlic cloves+1 tsp Coriander-grind
  • 1 Tomato-cut small, ½ Onion-chopped, frying Oil
  • 2 Chilies-sliced, Salt
Meatballs ingredients:
  • 300 gr ground Beef, 3 Eggs-boiled, 1 tsp Salt
  • 3 tsp Fried shallots & 1 Garlic clove-grind
  • 1 tsp ground Pepper,1 Egg white, 2 tsp Flour
  • ¼ tsp ground Nutmeg, Bread crumbs

Directions
  • Meatballs: Combine the meat, egg white, garlic, shallots, nutmeg, pepper, salt & flour. Shape the batter into 3 round flat form; place boiled eggs in the centre & bring the batter around it. Shape them into big balls. Coat balls with bread crumbs. Fry in medium heat until the meat cooked.
  • Sauté ground spices, onion, chilies, galangal, bay leaves until wilted. Pour in broth; add in soy sauce, ginger, cloves, fried shallots, pepper, nutmeg, tomato & salt to taste. Cook until the flavor blended.
  • Put in meatballs; stir until the sauce reduced. Remove from heat.
