Bahan
- 500 gr Daging sapi, 500 ml Santan kental, Minyak goreng
- 100 ml Air kelapa, 4 Daun jeruk, 1 Daun salam, 1 Asam
- 1 Sereh & 3 cm Lengkuas-geprek, 4 Telur-rebus
- 1 Tahu-potong & goreng ½ matang
Haluskan:
- 1 st Lada, 1 st Ketumbar, 1 cm Kunyit, 1 st Gula merah
- ½ st Jintan, 7 Bawang merah, 2 Bawang putih, 5 Kemiri
- 2 Cabai keriting (opsional), 2 st Garam
- Potong daging ukuran 6X4X1 cm. Tumis bumbu halus, lengkuas, sereh, asam, daun jeruk & salam dengan 2 sm minyak hingga harum. Masukkan daging, aduk hingga daging berubah warna.
- Tuang masuk 350 ml santan & air kelapa, masak dengan api kecil hingga empuk. Beri sisa santan, masak hingga ½ kering, aduk sesekali. Masukkan tahu & telur. Masak di suhu sedang hingga kuah mengering.
- 500 gr Beef-sliced into 6X4X1 cm, 4 Kaffir lime leaves
- 1 Lemongrass & 3 cm Galangal-bruised, 4 Eggs-boiled
- 1 Tofu-sliced & fry until half dried, 1 Bay leaf, Oil
- 100 ml Coconut juice, 500 ml thick Coconut milk
- 1 Tamarind
Grind into a paste:
- 1 tsp Coriander, 1 tsp Brown sugar, 2 Garlic cloves
- 2 tsp Salt, 7 Shallots, 1 cm Turmeric, 1 tsp Pepper
- 5 Candlenuts, ½ tsp Cumin, 2 Cayenne peppers (optional)
- Sauté the spices paste, galangal, lemon grass, tamarind, lime leaves & bay leaf with 2 tbsp of frying oil until fragrant. Add in beef chunks; stir until the beef colour changed.
- Pour in 350 ml coconut milk & juice; cook over low heat until the beef is tender. Add in remaining coconut milk; cook until the gravy rather dry,; stir occasionally. Put in tofu & eggs; cook over medium heat until the gravy thickens. Remove from the heat.
